Beef Burritos

One of the most popular stories (likely false) is that a man named Juan Mendez from Chihuahua, Mexico used a donkey to carry around his supplies for his food cart. To keep the food warm, he would wrap it up in a big homemade flour tortilla. First appearing in the early 1900s, right around the time of the Mexican Revolution, this quick, easy food item quickly became popular. Thus, the theory is that the concoction got its name because it was sold out of a donkey cart.

Whether Juan Mendez sold burritos on a donkey cart or had something to do with how popular they became, it’s unlikely that he created the burrito. The Diccionario de Mexicanismos has an entry for the burrito as early as 1895, quite a few years before Juan’s time. The entry states that a burrito is “A rolled tortilla with meat or other ingredients inside, called ‘coçito’ in Yucatán and ‘taco’ in the city of Cuernavaca and in Mexico City.”

The term burrito was popular in Guanajuato, a state in central Mexico.  As the dictionary entry is the only hard and fast evidence we must show where burritos came from, the idea that they originated in Guanajuato seems to be the most likely.

One of my beloved kitchens is Mexican. Although, I don’t eat hot food, I love Mexican flavors and I always make alterations to fit our palate. My husband and I very often go to a Mexican bar close to our home and eat there burritos, enchiladas, fajitas and other delicious dishes accompanied by margaritas or mojitos. I cook Mexican quite often and we all enjoy it at home. Last weekend I made these delicious beef burritos and there was not a single crumb left. If you want them spicy just increase the amount of pepper and you’ll be all set.

Ingredients/ Συστατικά
  • 8 flour tortillas
  • ½ kilo / 1 lb ground beef
  • 1 garlic clove, minced
  • 2 onions, sliced
  • 1 red and 1 orange bell pepper, sliced (for extra hot add jalapenos)
  • 4 tbsp taco or fajita spice
  • 1 cup tomato juice
For the Topping of Burritos
  • 1 jar taco sauce (mild or hot)
  • ½ cup tomato juice
  • 4 cups cheddar or any other melting cheese, grated
Instructions/ Εκτέλεση
  1. In a skillet pour couple of tbsp of olive oil and in medium/high heat sauté the onions and peppers until they start to soften.
  2. Add the garlic clove and sauté until fragrant.
  3. Stir in the ground beef and sauté until it changes color.
  4. Pour the tomato juice, fajita spice, some salt and pepper according to your liking.
  5. Lower heat to medium/low and let the ground meat boil for about 15 to 20 minutes.
  6. Remove from fire and set aside.
  7. Warm the tortillas in the microwave for 30 seconds.
  8. Take a rectangular pan or Pyrex and spread 3 tbsp of the taco sauce.
  9. Fill the tortillas with ground beef and some cheddar cheese.
  10. Place them one next to the other and pour on top the rest of the taco jar and the tomato juice.
  11. Spread the rest of the cheddar cheese and bake in a preheated oven at 175°C / 350°F for about 30 to 40 minutes or until the cheese on top has melted and taken a nice golden color.
  12. Remove from the oven and serve with refried beans and rice.

Μπουρίτος με Κιμά

Ingredients/ Συστατικά
  • 8 τορτίγες
  • ½ κιλό κιμά μοσχαρίσιο
  • 1 σκελίδα σκόρδο ψιλοκομμένη
  • 2 κρεμμύδια κομμένα σε φέτες
  • 1 κόκκινη και 1 πορτοκαλί πιπεριά, κομμένη σε φέτες
  • 4 κ.σ. Taco ή fajita καρύκευμα
  • 1 φλ. χυμό ντομάτας
Για Πάνω από τα Μπουρίτος
  • 1 βάζο σάλτσα για τάκος (ήπια ή καυτερή)
  • ½ φλ. χυμό ντομάτας
  • 4 φλ. τσένταρ ή οποιοδήποτε άλλο τυρί που λιώνει, τριμμένο
Instructions/ Εκτέλεση
  1. Σε ένα τηγάνι ρίξτε δύο κουταλιές της σούπας ελαιόλαδο και σε μέτρια/υψηλή θερμοκρασία σοτάρετε τα κρεμμύδια και τις πιπεριές μέχρι να αρχίσουν να μαλακώνουν.
  2. Προσθέστε τη σκελίδα σκόρδο και σοτάρετε μέχρι να αρχίσει να βγάζει το άρωμά του.
  3. Ρίξτε τον κιμά και σοτάρετε μέχρι να αλλάξει χρώμα.
  4. Ρίξτε το χυμό ντομάτας, το μπαχαρικό fajita, αλάτι και πιπέρι, σύμφωνα με τις προτιμήσεις σας.
  5. Χαμηλώστε τη θερμοκρασία σε μέτριο/χαμηλό και αφήστε τον κιμά να βράσει για περίπου 15 έως 20 λεπτά.
  6. Αφαιρέστε από τη φωτιά και αφήστε στην άκρη.
  7. Ζεστάνετε τις τορτίγες στο φούρνο μικροκυμάτων για 30 δευτερόλεπτα.
  8. Πάρτε ένα ορθογώνιο ταψί ή πυρέξ και απλώστε 3 κουταλιές της σάλτσας taco.
  9. Γέμισε τις τορτίγες με με κιμά και τυρί τσένταρ.
  10. Τοποθετήστε τη μία δίπλα στην άλλη και ρίξτε στην κορυφή το υπόλοιπο του βάζου taco και τη σάλτσα ντομάτας.
  11. Σκορπίστε το υπόλοιπο τσένταρ και ψήστε σε προθερμασμένο φούρνο στο 175°C για περίπου 30 έως 40 λεπτά ή μέχρι το τυρί στην κορυφή να λιώσει και να πάρει ένα ωραίο χρυσό χρώμα.
  12. Αφαιρέστε από το φούρνο και σερβίρετε με τηγανητά φασόλια και ρύζι.
