Beef Fillet with Creamy Thyme Sauce

Hello my friends! I would like to wish to all of you a very Happy and Prosperous New Year full of happy moments and lots of love. How were your holidays? Did you have fun? Did you meet with family or friends or both?

We went on a trip to the northern part of Greece to Macedonia Prefecture. We stayed for five days and we had the opportunity to visit several places with natural beauty. I will share with you some photos as I will be editing them. We did a lot of travelling but it was so much fun, and it gave us the chance to get together as a family.

Having a teenage boy, it is really hard to connect at times. He is at the “don’t talk to me, I am not a baby anymore” phase and sometimes it is getting hard to speak or do things together. But having him in the car it was inevitable that we talked and at some points I think he had fun too.

We returned couple of days before New Year’s Eve and we spent that night and New Year’s Day with my parents. I cannot begin to tell you the food I have consumed all those days. I got 1 kilo and now I have placed myself in a strict diet program to go back to where I want to be. It is ridiculous how easy weight adds up in you after the age of 45. I mean, I eat less than half what I used to eat and still I remain at the same weight. If I want to lose some kilos I practically have to starve. Added to that, there is always the fact that I am taking most of the weight around the belly which makes things even worse. Does that happen to you also? Isn’t it awful?

My whole life I was super thin, and I could consume anything I wanted anytime I wanted to. Now I am struggling to maintain my weight unsuccessfully most of the times and I am at a constant diet. As a friend of mine says there is no justice in this world. If there was chocolate would have 1 calorie and broccoli 1,000! Do you agree?

For New Year’s Eve I had my parents over for dinner and among other things I made this delicious Beef Fillet with a Creamy Thyme Sauce which was utterly delectable, and everyone was happy to eat it. You can serve it with mashed potatoes, rice or pasta, the choice is yours.

Beef Fillet with Creamy Thyme Sauce

Ingredients/ Συστατικά
  • 6 beef fillets
  • 200 gr. / 7 oz. White mushrooms, sliced
  • 1 shallot, finely chopped
  • 1 garlic clove, finely minced
  • ⅔ cup beef stock
  • 2 anchovy fillets
  • 1 tbsp mustard
  • 2 tsp Worcestershire sauce
  • 3 thyme sprigs
  • 200 ml / 7 fl oz. light cream
Instructions/ Εκτέλεση
  1. In a non-stick pan pour couple of tbsp of olive oil and in medium/high heat sauté the mushrooms until they are done.
  2. Remove and set aside.
  3. In the same skillet pour couple of more tbsp of olive oil and in medium/high heat sauté the onion, garlic and the thyme sprigs.
  4. When the onion starts to soften pour the beef broth and the anchovies and let boil for a minute.
  5. Remove the thyme sprig.
  6. With a stick blender mash everything so you will have a smooth kind of thick batter.
  7. Add the mustard, Worcestershire sauce, mushrooms and light cream and let boil until it starts to thicken a bit.
  8. Because the sauce has anchovies and Worcestershire sauce it is salted but if you want more you can add some at this point along with pepper.
  9. While the sauce is boiling in another pan cook the beef fillets according to your liking.
  10. Serve them with the sauce on top.

 
Μοσχαρίσια Φιλέτα Με Μανιτάρια και Σάλτσα Θυμαριού

Ingredients/ Συστατικά
  • 6 φιλέτα μοσχαρίσια
  • 200 γρ. λευκά μανιτάρια, κομμένα σε φέτες
  • 1 κρεμμύδι ψιλοκομμένο
  • 1 σκελίδα σκόρδο ψιλοκομμένη
  • ⅔ φλ. ζωμό μοσχαριού
  • 2 φιλέτα αντζούγιας
  • 1 κ.σ. μουστάρδα
  • 2 κ.γ. γουόστερ σος
  • 3 κλωνάρια θυμάρι
  • 200 ml κρέμα γάλακτος 15% λιπαρά
Instructions/ Εκτέλεση
  1. Σε ένα αντικολλητικό τηγάνι ρίξτε 2-3 κουταλιές της σούπας ελαιόλαδο και σε μέτρια/υψηλή θερμοκρασία σοτάρετε τα μανιτάρια μέχρι να μαλακώσουν.
  2. Βγάλτε από τη φωτιά και αφήστε στην άκρη.
  3. Στο ίδιο τηγάνι ρίξτε δύο τρεις κουταλιές της σούπας ελαιόλαδο και σε μέτρια/υψηλή θερμοκρασία σοτάρετε το κρεμμύδι, το σκόρδο και τα κλωναράκια θυμάρι.
  4. Όταν το κρεμμύδι αρχίζει να μαλακώσει ρίξτε το ζωμό του μοσχαρίσιου κρέατος και τις αντσούγιες και αφήστε να βράσει για ένα λεπτό.
  5. Αφαιρέστε το κλαδάκι θυμάρι.
  6. Με ένα ραβδομπλέντερ πολτοποιήστε τα πάντα.
  7. Έτσι θα έχετε μια μία λεία σάλτσα.
  8. Προσθέστε τη μουστάρδα, τη σάλτσα γουόστερ, τα μανιτάρια και την κρέμα γάλακτος και αφήστε να βράσει μέχρι να αρχίσει να δένει λίγο.
  9. Επειδή η σάλτσα έχει αντσούγιες και γουόστερ σος είναι αλατισμένη, αλλά αν θέλετε περισσότερο μπορείτε να προσθέσετε λίγο αλάτι σε αυτό το σημείο μαζί με το πιπέρι.
  10. Ενώ η σάλτσα βράζει σε ένα άλλο τηγάνι μαγειρέψτε τα φιλέτα μοσχαρίσιου κρέατος σύμφωνα με τις προτιμήσεις σας.
  11. Τα σερβίρετε με τη σάλτσα στην κορυφή.
