Now these are many adjectives don’t you think? But I couldn’t find a smaller English title for these sweets. Bougatsa is a sweet cream pie that comes from Macedonia, the Northern area of Greece. In this country we have small shops that sell spinach pies, cheese pies, sandwiches, apple pies etc for a quick snack. Something like Donut stores or deli stores in big cities of US. In Macedonia and especially in Thessaloniki, which by the way is the second biggest city of Greece, bougatsa is sold in all of these stores and it is their specialty.
They are very easy to make and their only difficulty is the time you need to make these small pies. I had some milk in the fridge that was about to go bad, so I thought I should make something with it. I started searching my books and I found this recipe from Vangelis Driskas’ book One Year in Vangelis Driskas’ Kitchen and I thought to myself “Perfect idea”. Vangelis Driskas is a famous Greek Chef from Macedonia, so he knows well how to make bougatsa. I made some changes and they were utterly delicious!

Bougatsinia

Ingredients
25 small puff pastry rounded sheets
2 cups of milk
2/3 cup sugar
½ cup + 2 tbsp fine semolina
2 tbsp butter
1/2 tsp vanilla extract
Egg wash to brush the puff pastry for color
Caster sugar and ground cinnamon for garnishing

Instructions

Preheat oven to 180° C / 350°F.

Make the cream first.
In a pot scald the milk and sugar.
When it’s hot and before it starts to bubble throw the semolina and start to stir.
Increase the heat to medium-high and continue to stir constantly.
The cream will soon start to thicken so keep stirring so as not to stick on the bottom of the pot.
Once the cream starts to bubble throw the butter and the vanilla extract and stir to combine.
Set aside and let cool a bit.
In a bowl pour the egg wash.
To assemble take one rounded puff pastry and add about 1 tbsp of the cream.
With water wet the edges of the puff pastry and seal them.
Take a pan and cover it with parchment paper.
Brush the bougatsinia with the egg wash and bake until they are golden brown.
Take them out, let them cool and dust caster sugar and cinnamon.
Absolutely sweethearts.

Μπουγατσίνια

Ingredients/ Συστατικά
  • 25 στρογγυλά σφολιατάκια
  • 2 φλ. γάλα
  • ⅔ φλ. ζάχαρη
  • ½ φλ. + 2 κ.σ. σιμιγδάλι ψιλό
  • 2 κ.σ. βούτυρο
  • ½ κ.γ. εκχύλισμα βανίλιας
  • Αυγό για να αλείψουμε τη σφολιάτα για χρώμα
  • Ζάχαρη άχνη και κανέλα για το γαρνίρισμα
Instructions/ Εκτέλεση
  1. Προθερμαίνετε το φούρνο στους 180° C.
  2. Κάντε πρώτα την κρέμα.
  3. Σε μια κατσαρόλα βάζουμε το γάλα και τη ζάχαρη.
  4. Όταν ζεσταθούν και πριν αρχίσουν να βράζουν ρίξτε το σιμιγδάλι και αρχίστε να ανακατεύετε.
  5. Δυναμώστε τη φωτιά σε μέτρια-υψηλή και συνεχίστε να ανακατεύετε συνεχώς.
  6. Η κρέμα θα αρχίσει σύντομα να δένει οπότε συνεχίστε το ανακάτεμα για να μην κολλήσει στον πάτο της κατσαρόλας.
  7. Μόλις η κρέμα αρχίσει να βγάζει φουσκάλες ρίξτε το βούτυρο και τη βανίλια και ανακατέψτε.
  8. Αφήστε στην άκρη να κρυώσει λίγο.
  9. Σε ένα μπολ ρίχνουμε το αυγό.
  10. Πάρτε ένα στρογγυλεμένο σφολιάτας και προσθέστε περίπου 1 κουταλιά της σούπας από τη κρέμα.
  11. Βρέξτε τις άκρες της σφολιάτας και σφραγίστε τις.
  12. Πάρτε ένα ταψί και σκεπάστε το με αντικολλητικό χαρτί.
  13. Βουρτσίστε τα μπουγατσίνια με το το αυγό και ψήστε μέχρι να ροδίσουν.
  14. Αφήστε να κρυώσουν και πασπαλίστε με ζάχαρη άχνη και κανέλα.
