I had all good intentions to make a dessert in this post, but kitchen gods and perhaps the mistakes of the recipe, I was trying to make, aborted me from showing you a little something sweet. I was very frustrated, mainly because of the time I’ve spent to try and make the dessert and in the end it all ended up in the garbage. At least, something good came out of this misfortune. From now on, I will be very reluctant when it comes to desserts, if the recipe comes from an unknown source.
Anyway, since we are out of dessert, I am giving you a recipe of bourbon chicken. I found this recipe in Recipezaar couple of years ago and after changing it a bit, I adjusted it more to my family’s preferences. Although it is called Bourbon Chicken, it has absolutely no alcohol in it, weird ha? The good thing about cooking this dish is that, you can always add or subtract things until it fits your taste palette. Anyway, this is great Asian meal and is ideal even for big gatherings, since it is very easy. You can make it a few hours ago and then 10 to 15 minutes before serving you can heat it and is ready. Additionally, it is put together so quickly, that makes it ideal for weekdays’ dinners. The original recipe can be found here. So let’s go and make it.

Bourbon Chicken

Ingredients
700 gr./24 oz. boneless chicken breasts cut into bite size pieces
2 tbsp sesame oil
1 garlic clove crushed
¼ tsp ground ginger
¼ cup apple juice (I didn’t have that so I put pomegranate juice no difference at all)
A little bit less than 1/3 of a cup light brown sugar (I used demerara because again I didn’t have plain)
2 tbsp ketchup
1 tbsp cider vinegar
½ cup water
¼ cup soy sauce
2 tsp corn flour
2 tsp water

Instructions

In a large skillet heat the sesame oil and add the chicken cook until lightly brown.
Remove chicken and add all the other ingredients except the corn flour and the ½ tbsp of water.
Bring to boil, add the chicken and then reduce heat to medium-low and simmer for 20 minutes.
In the meantime, dissolve the corn flour in the water and after the 20 minutes throw it into the skillet and mix to incorporate.
I accompanied it with basmati rice which goes very well with this.
But you can improvise as you like. Rice noodles would be great as well.

Κοτόπουλο Μπέρμπον
 
Αυτό το κοτόπουλο παρ'όλο που ονομάζεται μπέρμπον δεν έχει ούτε μία σταγόνα αλκοόλ. Είναι πανεύκολο, γρήγορο και απόλυτα κατάλληλο για ένα γρήγορο και νόστιμο γεύμα!

Ingredients/ Συστατικά
  • 700 γρ. στήθος κοτόπουλο χωρίς κόκκαλα και πέτσα
  • 2 κ.σ. σησαμέλαιο
  • 1 σκελίδα σκόρδο, λιωμένη
  • ¼ κ.γ. τριμμένο τζίντζερ ή 1 κ.γ. φρέσκο τζίντζερ τριμμένο
  • ¼ φλ. χυμό μήλου (Αν δεν έχετε χρησιμοποιήστε ότι άλλου είδους χυμό έχετε στο σπίτι)
  • Κάτι λιγότερο από ⅓ φλ. καφέ ζάχαρη
  • 2 κ.σ. ketchup
  • 1 κ.σ. μηλόξυδο
  • ½ φλ. νερό
  • ¼ φλ. σόγια σως
  • 2 κ.γ. corn flour
  • 2 κ.γ. νερό
Instructions/ Εκτέλεση
  1. Σε ένα βαθύ τηγάνι βάλτε το σησαμέλαιο και σε μέτρια φωτιά τσιγαρίστε το κοτόπουλο.
  2. Βγάλτε το κοτόπουλο από το τηγάνι, αδειάστε το λάδι που περίσσεψε και προσθέστε όλα τα υπόλοιπα υλικά εκτός από το κορν φλάουρ και τα 2 κ.γ. νερό.
  3. Ανεβάστε τη θερμοκρασία και μόλις πάρει μια βράση, προσθέστε το κοτόπουλο και κατεβάστε τη θερμοκρασία στο χαμηλό.
  4. Βράστε για 20 λεπτά.
  5. Διαλύστε το κορν φλάουρ στα 2 κ.γ. νερό και ρίξτε το στο φαγητό.
  6. Ανακατέψτε και η σάλτσα θα δέσει αμέσως.
  7. Το συνόδευσα με ρύζι μπασμάτι αλλά και οποιοδήποτε άλλο ρύζι ή ζυμαρικό πηγαίνει εξίσου καλά.
