One of the dishes I enjoy when I go to a Japanese restaurant is Chicken Teriyaki. I just love the sweet and sour flavor of the dish. I have a recipe of this dish, but I thought I should try a new one. I searched the internet and I found many variations of the dish. From what I understood though, the main ingredients of this are soy sauce, mirin and sugar. I was really hungry when I got back from work yesterday, so there was no alternative for me than to make it and enjoy it. The teriyaki sauce recipe comes from Jaden of Steamy Kitchen. It tasted great and I will definitely keep this recipe and make it again.

Chicken Teriyaki

Ingredients
700 gr. / 25 oz. chicken breasts, skinless, boneless
Sesame oil
80 gr. / 3 oz.  all purpose flour (optional)

For the Teriyaki Sauce
½ cup soy sauce
½ cup mirin
3 tbsp brown sugar

500 gr. / 1 lb. broccoli florets

Instructions

Put the broccoli in a pot with boiling water and boil it according to your liking.
I like it somewhat soft, but feel free to make them crunchy.
In the meantime, prepare the teriyaki sauce by adding all the ingredients in a pot in medium-high heat.
When it starts to boil, lower heat to low and let simmer until the sauce starts to thicken.
Cut the chicken breasts in thin strips and flour them.
If you don’t want flouring the chicken you may omit this stage.
Pour the sesame oil to a wok and saute the chicken chunks.
Add the sauce to chicken and saute for another 2 minutes.
If your sauce is not thick enough, add 1 tbsp of corn starch dissolved in 1 tbsp of water.
Serve with the broccoli and steamed rice.

Κοτόπουλο Τεριγιάκι

Ingredients/ Συστατικά
  • 700 γρ. στήθη κοτόπουλου, χωρίς πέτσα, χωρίς κόκαλα
  • Σησαμέλαιο
  • 80 γρ. αλεύρι για όλες τις χρήσεις (προαιρετικά)
  • Για τη Σάλτσα Τεριγιάκι
  • ½ φλ. σάλτσα σόγιας
  • ½ φλ. κρασί mirin (αν δεν έχετε mirin, βάλτε λευκό ξηρό κρασί και αντί για 3 κ.σ. ζάχαρη βάλτε 4 ή 5)
  • 3 κ.σ. καστανή ζάχαρη
  • 500 γρ. μπουκετάκια μπρόκολου
Instructions/ Εκτέλεση
  1. Βάλτε το μπρόκολο σε μια κατσαρόλα με βραστό νερό και βράστε σύμφωνα με τις προτιμήσεις σας.
  2. Εν τω μεταξύ, ετοιμάστε τη σάλτσα τεριγιάκι, προσθέτοντας όλα τα υλικά σε μια κατσαρόλα σε μέτρια-υψηλή θερμοκρασία.
  3. Όταν αρχίσει να βράζει, χαμηλόστε στο χαμηλό και αφήστε να σιγοβράσει έως ότου η σάλτσα αρχίσει να πήζει.
  4. Κόψτε το στήθος κοτόπουλου σε λεπτά κομμάτια και αλευρώστε.
  5. Εάν δεν θέλετε να αλευρώσετε το κοτόπουλο μπορείτε να παραλείψετε αυτό το στάδιο.
  6. Ρίξτε το σησαμέλαιο σε ένα γουόκ και σωτάρετε τα κομμάτια του κοτόπουλου.
  7. Προσθέστε τη σάλτσα κοτόπουλου και σοτάρετε για άλλα 2 λεπτά.
  8. Αν η σάλτσα σας είναι λίγο αραιή, προσθέστε 1 κ.σ. κορν φλάουρ διαλυμένο σε 1 κ.σ. νερό΄.
  9. Σερβίρουμε με το μπρόκολο και ρύζι στον ατμό.
