Kotopoulo Lemonato (Lemony Chicken)

- 700 gr. / 25 oz. chicken breasts fillet
- 4 tbsp olive oil
- 1 onion cut in rings
- 1 garlic clove, chopped
- 1 green bell pepper cut in strips
- 1 can mushrooms (you can use fresh approximately 350 gr.), either chopped or whole
- ¼ cup dry white wine
- 1 ¼ cups water
- Small bunch of parsley chopped
- ¼ cup dried basil
- ¼ cup dried oregano
- Salt and pepper to taste
- 3 tbsp corn flour dissolved in 3 tbsp water
- ⅛ cup lemon juice (or the juice of half a lemon)
- Cut the chicken in pieces (you can leave the fillets as they are, it does not matter).
- In a pot put the olive oil and heat at medium-high heat.
- Add the onion rings, garlic and peppers and sauté for 5 minutes.
- Add the chicken pieces and sauté for another 5 minutes.
- Pour the wine and let evaporate until it stays half.
- Add the water and all the herbs except the parsley, plus salt and pepper and simmer for ½ an hour.
- Add the lemon juice and parsley and continue to simmer for another half hour.
- The sauce is going to be runny, so just add the dissolved corn flour and let it thicken.
- You can serve with rice, orzo or in my case with basmati.
- I love the taste and aroma of basmati.
