Ingredients/ Συστατικά
For the Marinated and Grilled Lamb
  • 1 or 2 Lamb Racks, depending on number of diners
  • ¼ cup Worcestershire Sauce
  • ¼ cup Mirin
  • ½ cup Soy Sauce
  • 2 in piece of fresh Ginger, sliced thin and then pounded with a mallet to smash it
  • 2 Tablespoons Ketchup
  • 8-10 cloves Garlic, finely chopped
  • 4-5 Shallots, finely chopped
  • ½ cup Honey
  • ½ cup Pama (Pomegranate Liquor)
  • 2 Tablespoons fresh squeezed Lemon Juice
  • 2 Tablespoons Chili Paste
For the Garlic Roasted Broccoli
  • 1 large head of Broccoli, trimmed and cut into medium sized stalks
  • Extra Virgin Olive Oil Spray
  • 4-5 cloves Garlic, sliced thin
  • Sea Salt or Kosher Salt to taste

Preparation of Lamb
  1. Place lamb rack(s) in a large plastic bag with a zipper top.
  2. Combine all other ingredients in a bowl and whisk until well blended.
  3. Pour the marinade over the meat, remove air from bag, and place in the refrigerator in such a way as to insure that most of the meat is covered in the marinade.
  4. Marinade for a minimum of 5 hours. You can marinade for 24 hours if you would like.
  5. Turn occasionally to insure that all the meat is covered.
  6. When ready to cook, preheat grill on high, or if oven roasting preheat oven to 400F/200C.
  7. Grill or roast for about 20 minutes for rare or until it is done to your taste.
Preparation for Broccoli
  1. Preheat oven to 400F/200C.
  2. Place Broccoli on a rimmed baking sheet or roasting pan.
  3. Spray generously with olive oil, making sure to coat each stalk in its entirety.
  4. Stick slices of garlic under and in the broccoli flowerets and under and on top of stalks.
  5. Sprinkle generously with salt.
  6. Roast for about 20 minutes, checking after 15 to insure that the flowerets don’t begin to burn.
