Very Chocolate Ice Cream, Kids’ Friendly Edition

Ingredients/ Συστατικά
  • ½ cup Dutch-process cocoa
  • 1 cup sugar
  • 3 tbsp cornstarch
  • ¼ tsp salt
  • 1 cup cold water
  • 1 tbsp vanilla, or 1 tbsp espresso powder
  • 2 cups whole milk
  • 1 cup semi-sweet or bitter-sweet chocolate or chocolate chips
  • ¼ cup alcohol (completely optional)
Instructions/ Εκτέλεση
  1. In a saucepan mix the following: cocoa, sugar, cornstarch and salt.
  2. Add the water and stir until it is smooth.
  3. Add the vanilla.
  4. Whisk in the milk.
  5. Bring the mixture to a boil over medium heat. Whisk constantly as you don’t want anything to stick at the bottom of the pan.
  6. Remove the pan from heat and add the chocolate chunks.
  7. Stir until it is melted completely and incorporated to the mix.
  8. Pour the mixture to a glass bowl and place a plastic wrap on top so as not to form a skin.
  9. Refrigerate until it is completely chilled; overnight it is even better.
  10. Next day pour the batter into your ice cream maker and make it ice cream according to the manufacturer’s instructions.
  11. When it starts to thicken you can add the alcohol if you want it.
  12. We add alcohol so as to prevent the ice cream from becoming rock hard.
  13. I didn’t do it since it was going to be consumed by a child.
