Pasta Alfredo with Jack Daniels Chicken

- 700 gr. /25 oz chicken breasts cut in cubes
- 2 tbsp olive oil
- 1 cup pineapple juice
- 1 tbsp pineapple puree
- ⅔ cup water
- ¼ cup teriyaki sauce
- 1 tbsp soy sauce
- 1 cup brown sugar
- 3 tbsp lemon juice
- 1 tbsp Jack Daniels bourbon
- 1 tbsp onion powder
- 2 tsp garlic powder
- 200gr. /4 oz. cream cheese
- 60 gr. /2 oz. butter
- ¼ cup Parmesan cheese
- ¼ cup milk
- Garlic to taste
- 500 gr. /18 oz. any pasta you want. I used spaghetti
- 150 gr. /5 oz. bacon cut in cubes
- 1 onion chopped
- ½ cup Marsala wine
- 8 cherry tomatoes cut in half
- The Alfredo sauce
- Salt and pepper to taste
- In a skillet pour the olive oil and sauté the chicken until it is almost done.
- In the meantime, prepare the sauce by placing everything in a pot and bringing it to boil.
- Let it cook in medium/low heat.
- When the chicken is almost done, remove from skillet and place the pieces on the pot with the sauce.
- Let it cook until it is completely done.
- If the sauce is somewhat runny, thicken it with 1 tbsp. of corn flour dissolved in 1 tbsp of water.
- Put it aside.
- Soften cream cheese and butter.
- Add the cheese, the milk and the garlic over low heat.
- When the batter starts to boil, remove from heat.
- Boil pasta according to your liking.
- Sauté the bacon bits and the onion in a sauté pan until bacon starts to loosen and the onion to become transparent.
- Add the Marsala wine and let it boil until it will be reduced in half.
- Add the Alfredo sauce.
- Add the pasta to the sauce and toss.
- Stir in the cherry tomatoes and a dash cayenne pepper.
- Serve the Alfredo Pasta and on top the Jack Daniels Chicken.
