Bougatsinia (Small Greek Sweet Cream Pies)

- 25 small puff pastry rounded sheets
- 2 cups of milk
- ⅔ cup sugar
- ½ cup + 2 tbsp fine semolina
- 2 tbsp butter
- ½ tsp vanilla extract
- Egg wash to brush the puff pastry for color
- Caster sugar and ground cinnamon for garnishing
- Preheat oven to 180° C / 350°F.
- Make the cream first.
- In a pot scald the milk and sugar.
- When it’s hot and before it starts to bubble throw the semolina and start to stir.
- Increase the heat to medium-high and continue to stir constantly.
- The cream will soon start to thicken so keep stirring so as not to stick on the bottom of the pot.
- Once the cream starts to bubble throw the butter and the vanilla extract and stir to combine.
- Set aside and let cool a bit.
- In a bowl pour the egg wash.
- To assemble take one rounded puff pastry and add about 1 tbsp of the cream.
- With water wet the edges of the puff pastry and seal them.
- Take a pan and cover it with parchment paper.
- Brush the bougatsinia with the egg wash and bake until they are golden brown.
- Take them out, let them cool and dust caster sugar and cinnamon.
- Absolutely sweethearts.
