Pumpkin and Zucchini Kecap Manis Stir-fry

- 1kg/2.2 lb pumpkin, peeled, cut into 3cm/ 1.1 inch pieces
- ⅓ cup kecap manis (sweet soy sauce)
- 2 tbsp oyster sauce
- ½ tsp ground green and pink pepper
- 2 tbsp sesame oil
- 1 onion, cut into thin wedges
- 2 garlic cloves, thinly sliced
- 2 zucchini, halved lengthways, sliced diagonally
- 1 medium eggplant, cut into 2cm/1 inch pieces
- Put pumpkin on a microwave-safe bowl with 2 tbsp of water.
- Cover with plastic wrap and make small holes with a fork to let the steam escape.
- Microwave on high (100%) for 10 minutes or until just tender.
- Drain it.
- Whisk kecap manis, oyster sauce and pepper in a small bowl.
- Heat a wok over high heat.
- Add 1 tbsp of the oil.
- Add the onion and the garlic.
- Stir-fry for 2 minutes or until softened.
- Add the remaining oil.
- Add the zucchini and eggplant.
- Stir-fry for 4 to 5 minutes or until they become tender.
- Add the pumpkin.
- Stir-fry for 2 minutes.
- Add sauce mixture.
- Stir-fry for 1 to 2 minutes or until heated through.
