Peel the apples and cut them in small quadrant pieces.
Pour the lemon juice so as not to become black.
Mix the sugar, the cinnamon, the nutmeg and the cloves in a small bowl.
Take a deep skillet add the butter, the apples, the raisins, almonds and the sugar batter in medium/high heat.
Pour the water and let them boil until they become soft and absorb all their juices.
Remove the kataifi phyllo from its packaging and separate the fibers to make it fluffy.
Now there are two ways to make this. Either as a strudel, that is you can lay the kataifi phyllo on the counter, pour the stuffing and wrap it up, or you can take some of the kataifi phyllo and make individual portions, like small strudels.
Place the strudel or the small portions on a buttered pan and pour the melted, hot butter to cover them.
Bake in a preheated oven at 175°C/345°F for about 30 minutes or until the kataifi becomes deep golden on top.
While the kataifi is baking, prepare the syrup by placing all ingredients except the lemon juice in a pot and boil for about 5 to 8 minutes.
Remove from fire and add the lemon juice.
When you take out the kataifi from the oven, pour the hot syrup and let it stay to absorb it.
Serve alone or with a dollop of ice cream!
