Moustokoúloura (Traditional Grape Molasses Cookies)

- 200 gr. / 7 oz. olive oil
- 120 gr. / 4 oz. grape molasses
- 180 gr. / 6.5 oz. water
- 100 gr. / 3.5 oz. fresh full fat milk
- 250 gr. / 9 oz. sugar (the original recipe called for 200 gr.)
- 50 gr. / 2 oz. cognac
- 1 tsp baking powder
- 1 tsp ground cinnamon
- ¼ tsp ground cloves
- ½ tsp ammonia in powder
- ¼ tsp baking soda
- 900 gr to 1 kilo / 32 oz. to 2 lb. all-purpose flour
- A handful of raisins
- Preheat oven to 175° C/ 345° F.
- In the mixer’s bowl throw the olive oil, the grape molasses, the water, the milk, the sugar and the cognac.
- Mix slightly.
- In another small bowl mix the baking powder, the ammonia, the cinnamon, the ground cloves and the soda.
- Throw them into the olive oil batter and mix to incorporate.
- Throw the flour to the batter as well, slowly, slowly until a kind of stiff dough is formulated around the paddle.
- I divided the dough to two equal balls.
- I made plain cookies with the first ball.
- In the second ball I added the raisins and made moustokoúloura with raisins.
- We take couple of pans and cover them with parchment paper.
- Take a piece of dough equal to a big walnut and make cookies according to your liking.
- Be careful not to make them too thick because they rise due to baking powder and the soda.
- Place them on the pans and bake in batches for 15 to 18 minutes.
- Do not over bake them because they will become hard.
