Sweet Easter Bread (Tsoureki) 1

- 180 gr. /6 oz. all-purpose flour
- 225 gr. /8 oz. lukewarm water
- 4 ½ tsp dry yeast
- 75 gr. / 2.5 oz. melted butter, warm
- 400 gr. /14 oz. + 125 gr. /4.5 oz. all-purpose flour
- 175 gr. /6 oz. sugar
- 1 ¼ tsp salt
- 1 tsp ground mahlep
- 1 tsp ground mastic
- 2 large eggs + 1 egg for brushing the tsoureki
- 20 gr. /1 tbsp + 1 tsp powder milk
- Almonds in slices for decoration
- In a bowl add the 180 gr. /6 oz. flour the water and the yeast.
- Whisk and let it stay covered in a warm place for 45 minutes.
- You will see after the 45 minutes that it will be double in volume and have bubbles on the surface.
- In a blender add the sugar, the salt and the mahlep and ground them until the sugar becomes fine.
- Add the ground mastic too.
- In the starter add the two eggs and the 75 gr. / 2.5 oz. of butter and whisk.
- In the mixer bowl put the hook and mix the 125 gr. /4.5 oz. of flour, the powder milk, the sugar mixture and the starter.
- Start throwing the 400 gr. /14 oz. of flour in 3 butches.
- Let the mixer whisk for couple of minutes or until the dough is gathered around the hook.
- Put the dough in a big floured bowl, cover it with a towel and let it rest in a warm place for an hour.
- After an hour, knead to make a tsoureki to the shape you like.
- Coat a baking tray with parchment paper and transfer the tsoureki there.
- Let it rest covered for another one hour.
- Brush with a slightly whisked egg and decorate with the almonds
- Bake it in a preheated oven at 175° C/350° F for 30 to 40 minutes or until it takes a beautiful golden brown color.
