Easter Cookies (Koulourakia)

- 250 gr. /9 oz. butter
- 200 gr. /7 oz. sugar
- 1 large egg
- 2 tsp baking powder
- 400 gr. /14 oz. all-purpose flour
- 2 vanillins
- 1 tsp lemon extract
- Pinch of salt
- 1 egg (optional)
- Put the sugar to the blender and make it fine.
- In the mixer bowl add the butter and sugar and whisk until it takes a pale yellow color.
- Add the egg the vanillins and the lemon extract and continue to whisk.
- Add the flour the baking powder and the salt and continue a gain to whisk.
- The dough is very soft but it is easily shaped.
- Coat a baking tray with a parchment paper and put the koulourakia there.
- Brush with a slightly whisked egg (optional).
- Bake in a preheated oven at 180°C/350°F for 20 to 25 minutes or until they take a nice golden color on top.
