Ingredients/ Συστατικά
  • 175 gr. / 6 oz. sugar
  • 175 gr. / 6 oz. corn oil
  • 3 large eggs lightly beaten
  • 150 gr. / 5 oz. grated carrots
  • 60 gr. / 2 oz. raisins
  • zest of 1 large orange
  • 175 gr. / 6 oz. self-raising flour
  • 1 tsp bicarbonate of soda
  • 1 tsp ground cinnamon
  • ½ tsp grated nutmeg
  • For the Frosting
  • 80 gr. / 3 oz. caster sugar
  • 1½ tbsp orange juice
Instructions/ Εκτέλεση
  1. Preheat oven to 180 degrees Celcius.
  2. Oil and line the base and sides of an 18 cm / 7 in. bread tin with baking parchment.
  3. Throw the sugar and oil in the mixer's bowl and add the eggs.
  4. Mix until they incorporate.
  5. Stir in the grated carrots, raisins and orange zest.
  6. Mix the flour, soda and spices and sift them to the bowl.
  7. When they are incorporated stop mixing.
  8. The mixture will be fairly soft and almost runny.
  9. Pour the mixture into the tin and bake for 45 to 50 minutes.
  10. Let it cool for 5 minutes, take out of the tin and peel off the paper .
  11. Beat together the frosting ingredients and drizzle it on top.
