Smoked Salmon Pasta

- 1 tbsp olive oil
- 1 onion, chopped
- 1 cup vegetable stock
- 1 cup white wine
- 1 ½ tbsp scotch
- 100 gr. / 4 oz. smoked salmon, cut in chunks
- 1 cup light cream
- ¼ cup parmesan
- Chopped parsley
- Cook pasta according to your liking.
- Preferably cook it al dente because it is going to be cooked again when you will pour it in the sauce.
- In a skillet pour the olive oil and in medium heat sauté the onion.
- Add the wine and deglaze the pan.
- Pour the stock and the scotch and cook on medium heat for about 10 minutes.
- Add the cream, the parmesan and the parsley and cook until the sauce starts to thicken a bit.
- Add the salmon and let simmer for couple of minutes.
- Add the pasta and toss.
- Serve immediately.
