How a Simple Orange Cake is Transformed to an Extravaganza

- 175 gr. / 6 oz. self-rising flour
- 175 gr. / 6 oz. caster sugar
- 175 gr. / 6 oz. melted butter
- 5 tbsp milk
- 2 medium eggs
- The grated rind of 1 large orange
- 150 gr. / 5 oz. caster sugar
- Juice of two oranges
- 170 gr. / 6 oz. semi-sweet chocolate
- 1 tsp honey
- Preheat oven to 175° C / 345° F.
- Butter and flour a spring form with diameter 17cm / 6 in. or a round pan with the same diameter.
- In your mixer bowl place all ingredients starting from the dry and moving to the wet ones and mix until everything is incorporated.
- Pour the batter into the form and bake until a toothpick comes out clean about 40 minutes.
- About five minutes before the cake is done, put the caster sugar and the juice of the two oranges in a small pot and boil.
- When it starts to boil remove from fire and set aside.
- Take out of the oven the cake and make holes either with a toothpick or a skewer.
- Pour slowly the syrup and let the cake stay in the form until it is almost cold about 15 minutes.
- In the meantime and while the cake cools down melt the chocolate along with the honey in the microwave as follows:
- Break the chocolate in small pieces and add the honey in a glass bowl.
- Put in the microwave in high temperature for 30 seconds.
- Remove, stir and place it back for another 30 seconds.
- You follow this procedure until the chocolate is melted but must be as a lava and not very runny so as to spread it on the cake without dripping.
- Spread the chocolate on the cake covering it all and either serve immediately or you can wait until the chocolate becomes firm.
- In all cases it is super tasty!
