Broiled Shrimps and Halloumi over Pasta

Serves: 4-5
- 3 tbsp olive oil
- 1 onion, chopped
- 1-2 garlic cloves, minced
- 1 yellow pepper, sliced
- 1 green pepper, sliced
- 600 gr. / 21 oz. shrimps, deveined, thawed, tailless
- 130 gr. / 4.5 oz. halloumi cheese, cut in small cubes
- 400 gr. / 14 oz. whole tomatoes in sauce
- 200 gr. / 7 oz. tomato sauce
- ½ cup orange juice or dry white wine
- ¼ cup heavy cream, light or full fat whatever you have handy
- Salt and pepper
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 tsp dried thyme
- 3 tbsp parsley
- If you use wine add 2 tsp of sugar, if you use orange juice you are just fine.
- 500 gr. / 18 oz. pasta
- In a skillet pour the olive oil and in medium heat sauté the onion and peppers until they start to soften.
- Add the garlic and sauté for one minute.
- Pour the wine or orange juice and increase fire to medium/high.
- Sauté until half of the portion of wine or orange juice has evaporated.
- Add the tomatoes cut in chunks and the tomato juice.
- Sprinkle salt, pepper and all the herbs and toss.
- If using wine add the sugar too.
- Lower fire to low and simmer for 15 minutes.
- Two minutes before the end of simmering add the shrimps and the heavy cream.
- Turn on the broiler to max.
- Take a deep pan or pyrex and throw the shrimps so as to form one layer.
- Scatter the halloumi cubes all over and put under the broiler having a distance from it about 10 cm / 4 in.
- Let it broil for about five minutes or until halloumi has taken a nice golden color in its surface.
- Please be careful and while it is under the broiler don’t go away. It can be burnt very easily.
- Now you can serve it as an appetizer, just like this or you can prepare some pasta and serve it on top of it as a main course.
- The choice is yours. Either way it is delicious!
