Phylo Rolls with Spoon Sweet

Ingredients/ Συστατικά
  • 500 gr. / 1 lb phylo
  • 120 / 4 oz. to 130 gr. / 4.5 oz. blanched almonds, roasted and chopped
  • Spoon sweet or jam or preserves. For quantity you should calculate 1 tsp per roll. I made 45 rolls so I used 45 tsp of spoon sweet. I believe a jar plus a few tsp from a second one will be fine.
  • 250 gr. / 9 oz. butter, melted
For the Syrup
  • 2 cups sugar
  • 1 cup water
  • 2 cinnamon sticks
  • 4 cloves
  • 1 tbsp of lemon juice
  • Rind of one lemon
Instructions/ Εκτέλεση
  1. Take the phylo sheet and place the short site in front of you.
  2. Divide it in three equal parts and cut three strips with a pair of scissors.
  3. You can do it once for all phylo sheets since they are the one on top of the other, or you can do it separately for each sheet, but this is time consuming.
  4. Place the strips one on top of the other and cover them with a towel, so for the phylo to not get dry.
  5. Take one strip with the short site close to you.
  6. Brush with butter.
  7. Fold it in two.
  8. Butter again.
  9. Place in the center of the short site that is towards you a tsp of spoon sweet or preserves and a tsp of the chopped almonds.
  10. Roll it and seal its left and right sites.
  11. Place them in a buttered round pan with diameter about 28 cm / 11 in.
  12. Make sure that each time you remove one phylo sheet the rest remain covered with the towel. In this way they will not get dry.
  13. Preheat oven to 150°C / 300°F.
  14. When you finish the rolling, pour the remaining butter on top of the phylo rolls.
  15. Place the pan in the oven and bake for 1 ½ to 2 hours depending on the oven.
  16. My oven is somewhat strong, so it took me 1 ½ hours.
  17. After the first half hour, cover the pan with parchment paper so the rolls won’t get burnt.
  18. Half an hour before you take the cigars out of the oven prepare the syrup.
For the Syrup
  1. In a pot put all the ingredients and bring to boil.
  2. Boil for 5 to 6 minutes and remove from fire.
  3. Remove the cinnamon stick, the cloves and the lemon rind.
  4. Let it cool.
  5. When the phylo rolls are ready, take them out of the oven.
  6. Take a rack and put a pan underneath it.
  7. Place the rolls on the rack.
  8. With a ladle pour the syrup to each and every one of them.
  9. Whatever has fallen in the pan, use it once again to pour it over the phylo rolls.
  10. Let them cool and serve them.
  11. I would recommend eating them with a scoop of ice cream, vanilla would be perfect.
