Ingredients/ Συστατικά
For the Chicken
  • 1 kilo / 2 lb. chicken breasts, boneless, skinless, cut in small cubes
  • 2 small onions or one large, sliced
  • 2 garlic cloves, minced
  • 1 tsp oregano
  • 1 tsp basil
  • 1 tsp paprika
  • 1 tsp cumin
  • Salt, pepper
  • ½ cup sweet wine
For the Yogurt sauce
  • 200 ml Greek yogurt
  • 1 ¼ tsp dried mint
  • Salt and pepper
For the Tomato Sauce
  • 2 tbsp olive oil
  • 1 cup tomato sauce
  • 2 tbsp tomato paste
  • Salt, pepper
  • ½ tsp cumin
  • ½ tsp sugar
  • ¼ tsp curry powder
  • ½ tsp garlic powder
  • ½ tsp onion powder
For the Pitas
  • ½ kilo / 1 lb. all purpose flour
  • 1 tsp dried yeast
  • 1 tsp salt
  • 1 tsp sugar
  • 1 ¼ to 1 ½ cup warm water

  1. Start by preparing the chicken first.
For the chicken
  1. Put all the ingredients including the chicken in a non-reactive bowl, cover with cling film and place in the fridge for at least 2 hours up to overnight.
  2. When you are going to make the yiaourtloù, take the chicken out of the fridge and let it come to room temperature about an hour.
  3. Next make the pitas.
For the Pitas
  1. Put all dry ingredients in your mixer bowl and mix with the hook in slow for a few seconds.
  2. Add the water and turn on your mixer.
  3. Mix until a soft dough gathers around the hook.
  4. The dough will be somewhat sticky, this is perfectly fine.
  5. Take a glass bowl, flour it and put your dough to rest for an hour.
  6. During this hour the dough will double its volume and you can make your sauces.
For the Yogurt Sauce
  1. Mix all ingredients and place in the fridge until the time you serve.
For the Tomato Sauce.
  1. In a small pot add all the ingredients and bring to boil.
  2. Reduce heat and simmer for 15 minutes.
  3. Turn off heat and let the sauce rest.
For the Pitas
  1. Flour your hands and deflate the dough.
  2. In a floured bench take a dough ball equal to a small lemon or a lime and with a rolling pin make disks with diameter about 15 cm.
  3. Take a nonstick skillet and put it on the stove in medium heat.
  4. Bake the pitas on both sides until they start to take a golden color and at a few points a darker color.
  5. Remove and keep them warm.
For the Chicken
  1. In a large skillet pour couple of tbsp. of olive oil and throw the chicken along with the ingredients of marinade in medium/high heat.
  2. Sauté until chicken is completely done and has taken a nice golden color.
Assembly
  1. Take one pita and salt and pepper it.
  2. Add as much chicken as you like.
  3. Pour some tomato sauce and on top of these add some yogurt.
  4. Serve immediately.
  5. It goes perfectly with French fries.
Notes/ Σημειώσεις
Please note that the dough makes more pitas than the ones you need for the recipe, but after the hour of dough relax you can put whatever is left to the fridge or even the freezer and use it in another instance!
