Lemon, Honey Chicken with Potatoes and the Winners

Ingredients/ Συστατικά
  • 1 chicken 2 kilos / 4 lb.
  • Juice of two lemons
  • 3 tbsp honey
  • 2 cups water
  • ¼ cup olive oil
  • 3 tbsp mayonnaise
  • 20 small potatoes
  • 3 carrots, cut in slices
  • Salt and pepper
  • 1 tbsp dried oregano
For the Stuffing
  • 1 cup breadcrumbs
  • ½ cup croutons
  • 1 onion, chopped
  • 1 egg, beaten
  • Juice of half lemon plus the rind of half lemon
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • ½ tsp dried thyme
  • Salt and Pepper

  1. Preheat oven to 200°C / 400°.
For the Stuffing
  1. Mix everything in a bowl and put aside.
  2. Put the potatoes in a deep pot with water and salt and boil them for 15 minutes at high.
  3. Drain them.
  4. Stuff the chicken, place it in a deep pan and add the potatoes carefully.
  5. Add the carrots.
  6. Cover the chicken with mayo and throw salt, pepper and the oregano.
  7. Pour the olive oil and water and cover the chicken with a parchment paper for the first 30 minutes of baking, then take it off.
  8. Brush the chicken with the honey/lemon juice batter every 15 minutes and up until 30 minutes before the end.
  9. Whatever is left from the brushes pour it to the potatoes after the last brush.
  10. You have to calculate 20 minutes per half kilo / pound plus 20 more minutes in total.
  11. My chicken which was 2 kilos / 4 lb. took about 100 minutes to cook.
  12. Five to ten minutes before the end turn your oven to the broiler and leave it to get color and become crispy.
  13. Please don’t leave it unattended because it may get burnt.
  14. Remove from the oven, let it rest for 10 minutes and serve.
