Cinnamon-Apple Cake

  • 335 gr. / 1¾ cups sugar, divided
  • 115 gr. / ½ cup butter, softened
  • 1 tsp vanilla extract
  • 180 gr. / 6.3 oz. full fat Greek yogurt
  • 2 large eggs
  • 220 gr. / 1½ cups all purpose flour
  • 1½ tsp baking powder
  • Pinch of salt
  • 2 tsp ground cinnamon
  • 2 medium apples cut in quarters and sliced
Instructions/ Εκτέλεση
  1. Preheat oven to 175C / 250F.
  2. Beat 1½ sugar, margarine, vanilla and yogurt at medium speed about 1 minute.
  3. Add eggs, 1 at a time, beating well after each addition.
  4. Combine flour, baking powder and salt.
  5. Add flour to creamed mixture, beating at low speed until blended.
  6. Combine ¼ cup sugar and cinnamon.
  7. Butter a bread form with dimensions 30 cm X 11 cm / 12 in. X 4.5 in.
  8. Lay a parchment paper on its bottom and butter it and flour it as well.
  9. Sprinkle ½ of the sugar/cinnamon mixture.
  10. Place half of the apple slices so as to cover the surface.
  11. Throw half of the cake batter and level it.
  12. Sprinkle the rest ½ of the sugar/cinnamon mixture.
  13. Place the rest half of the apple slices so as to cover the surface.
  14. Pour the rest half of the cake batter and level it again.
  15. Bake until the cake pulls away from the sides of the pan about 45 to 1 hour depending on the oven.
  16. Cool the cake completely on a wire rack.
  17. Turn it upside down and serve.
