Cinnamon-Apple Cake

- 335 gr. / 1¾ cups sugar, divided
- 115 gr. / ½ cup butter, softened
- 1 tsp vanilla extract
- 180 gr. / 6.3 oz. full fat Greek yogurt
- 2 large eggs
- 220 gr. / 1½ cups all purpose flour
- 1½ tsp baking powder
- Pinch of salt
- 2 tsp ground cinnamon
- 2 medium apples cut in quarters and sliced
- Preheat oven to 175C / 250F.
- Beat 1½ sugar, margarine, vanilla and yogurt at medium speed about 1 minute.
- Add eggs, 1 at a time, beating well after each addition.
- Combine flour, baking powder and salt.
- Add flour to creamed mixture, beating at low speed until blended.
- Combine ¼ cup sugar and cinnamon.
- Butter a bread form with dimensions 30 cm X 11 cm / 12 in. X 4.5 in.
- Lay a parchment paper on its bottom and butter it and flour it as well.
- Sprinkle ½ of the sugar/cinnamon mixture.
- Place half of the apple slices so as to cover the surface.
- Throw half of the cake batter and level it.
- Sprinkle the rest ½ of the sugar/cinnamon mixture.
- Place the rest half of the apple slices so as to cover the surface.
- Pour the rest half of the cake batter and level it again.
- Bake until the cake pulls away from the sides of the pan about 45 to 1 hour depending on the oven.
- Cool the cake completely on a wire rack.
- Turn it upside down and serve.
