Lemon Tea Braised Pork Chops

- 1 cup prepared strong lemon tea
- ¼ cup honey
- 1 tsp dry thyme
- 2 tbsp cider vinegar
- 1 tbsp Dijon mustard
- 2 garlic cloves, minced
- ½ tsp salt
- ½ tsp green and pink pepper
- ½ tsp ground ginger
- 1 cup prepared strong lemon tea
- ¼ cup honey
- 1 tsp dry thyme
- 2 tbsp cider vinegar
- 1 tbsp Dijon mustard
- 2 garlic cloves, minced
- ½ tsp salt
- ½ tsp green and pink pepper
- ½ tsp ground ginger
- 100 ml light cream 15% fat
- 4 pork chops
- 300 gr. white button mushrooms, sliced
- Mix all the ingredients for the marinade in a bowl to incorporate.
- In a pyrex or a non-reactive pan place the chops and pour on top of them the marinade.
- Let them stay for at least two hours in the fridge.
- One hour before you are about to cook them take them out of the fridge, pat dry them with a paper towel and leave them to come to room temperature.
- About 15 minutes before you cook the chops start preparing the sauce.
- In medium heat sauté the mushrooms until they are soft.
- Add all the ingredients of the sauce minus the cream and bring to gentle boil.
- Boil for about 3 minutes and reduce the heat to low and add the cream.
- Gentle boil for three more minutes.
- In a non-stick skillet, in medium/ high heat cook the chops for about 4 minutes from one side and 3 minutes from the other side.
- Remove and place them in the sauce and let them cook with it another 3 to 4 minutes.
- Remove from fire let them rest for couple of minutes and serve.
