Lemon Tea Braised Pork Chops

Ingredients/ Συστατικά
For the Marinade
  • 1 cup prepared strong lemon tea
  • ¼ cup honey
  • 1 tsp dry thyme
  • 2 tbsp cider vinegar
  • 1 tbsp Dijon mustard
  • 2 garlic cloves, minced
  • ½ tsp salt
  • ½ tsp green and pink pepper
  • ½ tsp ground ginger
For the Sauce
  • 1 cup prepared strong lemon tea
  • ¼ cup honey
  • 1 tsp dry thyme
  • 2 tbsp cider vinegar
  • 1 tbsp Dijon mustard
  • 2 garlic cloves, minced
  • ½ tsp salt
  • ½ tsp green and pink pepper
  • ½ tsp ground ginger
  • 100 ml light cream 15% fat
  • 4 pork chops
  • 300 gr. white button mushrooms, sliced
Instructions/ Εκτέλεση
For the Marinade
  1. Mix all the ingredients for the marinade in a bowl to incorporate.
  2. In a pyrex or a non-reactive pan place the chops and pour on top of them the marinade.
  3. Let them stay for at least two hours in the fridge.
  4. One hour before you are about to cook them take them out of the fridge, pat dry them with a paper towel and leave them to come to room temperature.
For the Sauce
  1. About 15 minutes before you cook the chops start preparing the sauce.
  2. In medium heat sauté the mushrooms until they are soft.
  3. Add all the ingredients of the sauce minus the cream and bring to gentle boil.
  4. Boil for about 3 minutes and reduce the heat to low and add the cream.
  5. Gentle boil for three more minutes.
  6. In a non-stick skillet, in medium/ high heat cook the chops for about 4 minutes from one side and 3 minutes from the other side.
  7. Remove and place them in the sauce and let them cook with it another 3 to 4 minutes.
  8. Remove from fire let them rest for couple of minutes and serve.
