Risotto with Porcini Mushrooms and Raisins

- 4 tbsp olive oil, divided
- 1 small onion finely chopped
- 2 cups arborio rice
- 40 gr. / 1.5 oz. dried porcini mushrooms
- ½ cup raisins
- 1 cup dry white wine
- 4½ cups chicken stock or vegetable stock (I used Knorr cubes)
- 2 handfuls of parmigiano
- Salt, pepper, garlic powder
- Clean mushrooms.
- Personally, I washed them very well.
- Place them on a bowl and throw warm water to fill them and leave them for 15 minutes.
- Drain them.
- In a skillet put 2 tbsp of olive oil and place it on the stove at high heat.
- Throw the mushrooms after you drain them and saute for 5 minutes.
- Salt and pepper them and add a pinch of garlic powder.
- In a pot put the other 2 tbsp of olive oil at high heat and throw the chopped onion.
- Saute for 3 to 4 minutes and then throw the arborio rice.
- Saute for 2 minutes and then add the wine.
- Lower the heat to medium and mix until wine is absorbed.
- Start to pour the stock cup by cup and continue to mix until each cup is absorbed.
- When you have thrown 2 cups of stock, throw also the mushrooms and raisins.
- At the end you taste the rice.
- It should be fairly firm in the center and creamy in its outer part.
- At this point, and right after you have thrown the last cup of stock, the parmigiano and add salt and pepper if needed.
- Serve immediately.
