Flaky Juicy Chicken Pie

- 2 chicken breasts, skinless, boneless, cut in small cubes
- 2 onions, sliced
- 1 green pepper, sliced
- 1 colored bell pepper, sliced (I used orange)
- 100 gr. / 4 oz. mushrooms, sliced
- ½ cup chicken stock
- ½ cup light cream
- 2 cups, yellow cheese any type you like (I used gouda but you can use gruyere or cheddar etc.)
- Salt, pepper
- ½ to 1 tsp cumin
- ½ tsp paprika
- ½ tsp poultry seasoning
- ½ cup cracked wheat
- 1 phyllo package of ten sheets or puff pastry
- Olive oil for sautéing and brushing the phyllo sheets
- In a heavy skillet pour couple of olive oil tbsp and sauté the onions until they start to soften.
- Add the peppers and sauté until they start to soften too.
- Throw the mushrooms and continue to sauté until they become soft too.
- Add some salt and pepper, not too much because you will season later too.
- Remove from the fire and transfer them to a bowl.
- In the same skillet pour couple of tbsp. of olive oil and sauté the chicken pieces in high heat.
- Throw the vegetables and pour the chicken stock.
- Let them boil until the stock is absorbed.
- Pour the light cream, salt, pepper, cumin, paprika and poultry seasoning and stir.
- Add the cracked wheat and let boil until almost all the cream is absorbed.
- Remove from fire.
- Take a round pan with about 40cm / 16 in. diameter.
- Oil it well and place one phyllo sheet to cover the bottom and exceed the sides.
- Oil it again.
- Place another phyllo sheet.
- Repeat this 5 times.
- Add the chicken filling and level it.
- Start putting phyllo sheets on top of filling following the exact same procedure as before.
- In the end cut the excessive phyllos from the sides and close the pie by making a cord around with the phyllo.
- Cut the upper part with a sharp knife and put it in a preheated oven at 175°C / 350°F.
- Be careful to cut the upper phyllo part and not the lower one.
- Bake for about 30 minutes or until the phyllo on top has gained a nice golden color.
- Remove from the oven and let it rest for about 15 minutes.
- Cut the pieces and serve.
- In case you use puff pastry you just have to place the first sheet, throw the filling on top and level it and cover with the other puff pastry sheet.
