Tweaked Apple Pasta Frolla

For the Crust
  • 235 gr. / 8 oz. all-purpose flour
  • 80 gr. / 3 oz. fine semolina
  • 110 gr. / 4 oz. sugar
  • ½ tsp baking powder
  • Pinch of salt
  • 200 gr. / 7 oz. cold butter
  • 1 egg
  • 1 egg yolk (keep the egg white for brushing the dough strips)
  • ½ tbsp. lemon zest
  • 1 tsp vanilla extract
For the Filling
  • 4 apples, thinly sliced
  • 5 tbsp sugar
  • 2 tsp cinnamon
  • ½ tsp ground cloves
  • 1 tbsp butter
  • 1 tbsp all-purpose flour
  • Juice of half lemon
  • Pinch of salt

For the Crust
  1. In your stand mixer add the flour, sugar, salt and baking powder and mix to combine.
  2. Add the butter cut in small cubes and mix until the mixture looks like coarse sand.
  3. In a bowl whisk lightly the egg, egg yolk, vanilla and lemon zest.
  4. Turn on your stand mixer and start pouring the egg batter to the flour mixture slowly.
  5. Whisk until the dough gathers around the paddle.
  6. Remove and before you roll it to a disk cut a small piece of the dough enough to make the strips on top.
  7. Make a disk with a diameter around 30 cm / 12 in., to cover the bottom and the sides of a pie pan of 24 cm / 9 in.
  8. Cover the disk with a plastic wrap and place it in the fridge for at least one hour or overnight.
For the Filling
  1. You can make the filling while the dough rests in the fridge or leave it for the nest day if you are planning to leave the dough overnight.
  2. Cut the apples and pour the lemon juice.
  3. In a bowl combine sugar, cinnamon, ground cloves, flour and salt.
  4. Take a large skillet and add the butter in medium heat.
  5. Add the apples and the sugar/cinnamon mix.
  6. Toss and let them cook in medium heat for about 20 minutes or until the sugar has completely melted and the apples have started to soften.
Assembly
  1. Preheat oven in 175°C / 350°F.
  2. Take the dough disk out of the fridge to thaw for about 10 minutes.
  3. Take a pie pan of 24cm / 9 in and butter it well.
  4. Carefully cover its bottom and sides with the dough.
  5. It doesn’t matter if the dough is cut at points.
  6. Just join them together and will be fine.
  7. Arrange the apples and pour on top of them the syrup they were cooked in.
  8. Roll the small ball of dough to a flat rectangular and cut thin strips.
  9. Place them on top of the filling to look like a lattice.
  10. Brush them with the egg white and place the pie in the oven.
  11. Bake for about 30 to 35 minutes or until the pie crust turns to golden.
  12. Remove, let cool, cut and serve.
