Beef Fillet in Creamy Herbed White Wine Sauce

- 6 medium beef fillets
- 1 onion, minced
- ⅓ cup rice vinegar
- 1 ½ tsp dried tarragon
- ½ tsp dried thyme
- ½ cup dry white wine
- ⅔ cup beef stock
- 1 ½ light cream
- A bunch of fresh parsley, minced
- Salt and pepper
- In a deep skillet pour couple of tablespoons of olive oil and sauté the onion for a minute.
- Add the vinegar, thyme and tarragon and cook until the vinegar evaporates completely.
- Add the wine and stock and continue to cook until it remains about ⅔ of a cup.
- Add the cream and salt and pepper and let boil until the sauce starts to thicken.
- Add the parsley and cook for another minute.
- In the meantime, prepare the beef.
- Season with salt and pepper and cook them in medium/high heat in a skillet until medium about 3 minutes per side.
- Serve with the creamy sauce on top.
