Comfort Chicken Breasts with Wild Mushrooms and Cheese

- 3 chicken breasts, skinless, boneless, cut as butterfly
- 1 tomato, cut in cubes
- 1 yellow and 1 orange bell pepper, sliced
- 1 onion, sliced
- 2 garlic cloves minced
- 40 gr. dried wild mushrooms, soaked in hot water
- 1 tsp dried basil
- 4 basil leaves, chopped
- A small bunch of parsley, chopped
- ¼ cup light cream
- ½ cup white wine
- ⅔ cup chicken broth
- 50 gr. cream cheese
- Salt and pepper
- 1 cup grated cheese, use whatever you have handy as long as it melts easily
- Olive oil for sautéing
- In an oven pour couple of tbsp of olive oil and sauté the chicken breasts in medium high heat.
- Sauté two minutes per side and then remove and set aside.
- In the same skillet add couple of tbsp of olive oil and sauté the onions and the peppers until they start to soften.
- Add the mushrooms after draining them and continue to sauté for a minute.
- Pour the wine and let boil until it is almost evaporated.
- Pour the broth and return the breasts to the skillet.
- Salt and pepper and add the tomato cubes.
- Lower heat to medium and let boil for 10 to 15 minutes.
- Whisk the cream with the cream cheese and pour it on top.
- Add the basil leaves, dried basil and the parsley and spread the cup of cheese.
- Let boil for 5 minutes and then turn on the broiler.
- Broil for about 5 minutes or until the cheese has melted completely and taken a nice golden color.
- Remove let rest for 5 minutes and serve.
