For the Lemon Curd
  • 2 large eggs
  • 1 cup sugar
  • ½ cup melted butter
  • ⅓ cup lemon juice
  • ⅔ water
  • 3 tsp corn starch
For the Lemon Mousse
  • 200 ml / 7 fl oz. heavy cream 35% fat
  • 100 gr. / 6 oz. lemon curd
  • 4 tbsp caster sugar
  • ⅛ tsp lemon extract
  • ½ package of petit beure cookies

For the Lemon Curd
  1. Take a microwave oven safe bowl and put the eggs and sugar and whisk to incorporate.
  2. Add the melted butter and whisk again.
  3. Add the lemon juice and the water in which you have dissolved the corn starch.
  4. Mix to incorporate and place it in the microwave oven putting underneath a dish.
  5. Start your oven at the highest temperature for 1 minute.
  6. Remove whisk and put back in the microwave for another one minute and so on and so forth.
  7. In my oven it took 4,5 minutes to arrive at 86°C/ 186°F which is the right temperature for the eggs to cook.
  8. If you don’t have a thermometer, you will know it’s ready when it covers the back of your spoon and doesn’t drop.
  9. Place a cling film directly to the curd and put it in the fridge until it is cool.
For the Lemon Mousse
  1. In your stand mixer whip the heavy cream adding the caster sugar one tbsp at a time.
  2. Pour the lemon extract and whip until it forms soft picks.
  3. When the lemon curd is cold pour 100 gr. / 6 oz. to the whipped cream and fold gently.
  4. In a blender add the cookies and blend into coarse pieces.
  5. Take 4 short glasses and add about 2 tbsp of the coarse cookies in each.
  6. With a piping bag divide the lemon mousse to the four classes.
  7. Again, add about two hipping tbsp of cookies to each glass.
  8. Pour about 2 tbsp of lemon curd on top and decorate with chocolate or coconut.
  9. Put in the fridge and take it out about 5 minutes before serving time.
