Pitas with Spelt Flour

  • 200 gr. / 7 oz. spelt flour
  • 230 gr. / 8 oz. lukewarm water
  • ½ teaspoon instant yeast
  • 120 gr. / 4 ¼ oz. all-purpose Flour
  • 1 tsp salt
  • 1 tbsp olive oil
Instructions/ Εκτέλεση
  1. Add all the ingredients in your stand mixer’s bowl and mix gently until the dough is smooth and supple.
  2. The dough is a bit sticky but this is how it should be.
  3. Transfer the dough to a lightly greased bowl, cover, and allow it to rise at room temperature for about 60 minutes.
  4. It will rise a bit but it is not as much as when you make bread.
  5. Meanwhile, preheat the oven to 260° C / 500° F.
  6. Turn the dough out onto a lightly floured work surface and divide it into eight pieces.
  7. Shape each piece into a ball and allow them to rest for 15 minutes, covered.
  8. Lightly dust your counter and sprinkle some flour on top of each ball, then roll them into circles about 15 cm / 6 in. in diameter.
  9. Position one rack at the bottom of the oven and have a baking sheet at the ready.
  10. Transfer the pitas to the baking sheet and bake for about 5 to 8 minutes.
  11. Remove the pitas and as they are still hot wrap them with a clean textile dishtowel.
  12. Serve on the side or fill them with your favorite filling.
