Orange Chicken with Rice Noodles

Ingredients/ Συστατικά
For the Sauce
  • 3 tsp orange zest
  • ¾ orange juice
  • 1 tbsp sugar
  • 1 tbsp honey
  • 6 tbsp vegetable stock
  • 3 tbsp light soy sauce
For the Frying Batter
  • 1 egg
  • 1 ½ tsp salt
  • ¼ tsp green and red pepper
  • ½ cup all-purpose flour
  • ¼ cup cornstarch
  • ¼ cup water
  • 700 gr. Chicken breasts cut in strips
  • 2 tsp ground ginger
  • 2 garlic cloves, minced
  • 1 green onion, chopped
  • 1 green bell pepper, cut in squares
  • 3 tbsp rice wine
  • 1 tbsp cornstarch, 2 tbsp water
  • 2 tbsp sesame oil
  • 1 cup sesame oil
Instructions/ Εκτέλεση
  1. In a non-reactive bowl mix all the ingredients of the sauce and set aside.
  2. In another bowl mix all the ingredients of the frying batter and stir until you have a somewhat thick batter.
  3. Place the chicken strips in the bowl where the frying batter is and mix until they are covered with it.
  4. In a frying pan put about 1 cup of sesame oil in 165° C / 330° F and fry the chicken in batches approximately 2 to 3 minutes per batch.
  5. Remove and put aside.
  6. Take a wok or any other frying pan and add 2 tbsp of sesame oil. Add the peppers, garlic and ginger and stir fry for about 5 minutes.
  7. Pour the rice wine and the orange sauce.
  8. Sauté for a minute and then add the chicken pieces. Lower heat and add the 1 tbsp of cornstarch dissolved in the 2 tbsp of water.
  9. Let simmer for 10 minutes and then serve over rice, egg noodles or as in our case over rice noodles.
