Bourbon Chicken

Ingredients/ Συστατικά
  • 700 gr./ 24 oz. boneless chicken breasts cut into bite size pieces
  • 2 tbsp sesame oil
  • 1 garlic clove crushed
  • ¼ tsp ground ginger
  • ¼ cup apple juice (I didn’t have that so I put pomegranate juice no difference at all)
  • A little bit less than ⅓ of a cup light brown sugar (I used demerara because again I didn’t have plain)
  • 2 tbsp ketchup
  • 1 tbsp cider vinegar
  • ½ cup water
  • ¼ cup soy sauce
  • 2 tsp corn flour
  • 2 tsp water
Instructions/ Εκτέλεση
  1. In a large skillet heat the sesame oil and add the chicken cook until lightly brown. Remove chicken and add all the other ingredients except the corn flour and the ½ tbsp of water.
  2. Bring to boil, add the chicken and then reduce heat to medium-low and simmer for 20 minutes.
  3. In the meantime, dissolve the corn flour in the water and after the 20 minutes throw it into the skillet and mix to incorporate.
  4. I accompanied it with basmati rice which goes very well with this.
  5. But you can improvise as you like.
  6. Rice noodles would be great as well.
