Fluffy Vanilla Cake with Chocolate Bites

  • 400 gr. / 14 oz. sugar
  • 4 large eggs
  • 70 gr. / 2.5 oz. corn oil
  • 240 gr. / 8.5 oz. All-Purpose Flour
  • 1 tsp salt
  • 2 tsp baking powder
  • 60 gr. / 2 oz. butter
  • 230 gr. / 8 oz. milk
  • 2 tsp vanilla extract
  • About ½ cup of chocolate chips or cut a chocolate bar in pieces
Instructions/ Εκτέλεση
  1. Preheat oven to 160°C / 325°F.
  2. Lightly grease a 23cm X 33cm / 9 in. x 13 in. pan.
  3. Beat the eggs and sugar until they're fluffy and pale, about 2 minutes with your mixer.
  4. Pour in the corn oil.
  5. Add the flour, salt, and baking powder to the egg batter, beating just enough to combine.
  6. In a small pot set over medium heat, bring the butter and milk just to a boil.
  7. Add the vanilla.
  8. Slowly pour the hot milk mixture to the cake batter, mixing until everything is incorporated. Scrape the bowl, and mix briefly, just until smooth.
  9. Pour the batter into pan.
  10. Add the chocolate chips or the chocolate pieces.
  11. Bake for 40 to 45 minutes, until a toothpick inserted into the center comes out clean.
  12. Remove the cake from the oven and place it on a rack to cool.
