Vasilopita 2020

- 250 gr. / 9 oz. Butter
- 2 cups sugar
- 6 eggs
- 1 tsp vanilla extract
- Zest from 1 orange
- ½ tsp cinnamon
- ½ tsp nutmeg
- 5 tbsp cognac or any sweet liqueur
- 3 tsp baking powder
- 2 ½ self-rising flour
- 1 cup milk
- ½ cup chocolate confetti
- ½ cup thickly ground almond
- Confectioner’s sugar for topping
- Preheat oven to 170°C/ 340°F.
- In your stand mixer mix the butter and sugar until fluffy.
- Add the eggs one at a time trying to incorporate after each egg.
- Add the vanilla, zest, cinnamon, nutmeg and the liqueur.
- In another bowl mix the flour with the baking powder.
- Lower the speed of the mixer to low and start adding flour and milk alternately starting with flour and finishing with it.
- Add the almonds and confetti and incorporate them with a spatula.
- Butter and flour a round pan with 32 cm / 12 in. diameter and pour the batter.
- Bake for about half hour or until the toothpick comes out clean.
- Remove, let cool and dust with confectioner’s sugar.
