Η συνταγή και στα ελληνικά στο τέλος της ανάρτησης!

Greece and France have strong relations since antiquity. Ancient Greeks colonized southern France with their most important colony being that of Marseilles. Gulls became a part of Hellenistic world and many Greek goods travelled all the way to France.

During Middle Ages, French crusaders set up several states in Greek territory following the fall of The Byzantine Empire in 1204.

Greek war of Independence against Ottoman Empire was influenced by French Revolution and the French Enlightenment. It was their ideas who inspired educated people like Adamantios Korais and Rigas Feraios to write about a free Greek nation in which all citizens will have the right to education, have a common culture, religion and background.

Voltaire was a French Enlightenment writer, historian, and philosopher. He was a strong believer of freedom of religion, freedom of expression, and separation of church and state. He said: “I disagree with what you are saying, but I will defend with my death your right to say it”. Having this in mind I, along with several other million people around the world, watched the massacre that took place in France.

I was lucky enough to be raised by a family who respects dissimilarity of people and thinks that everyone has equal rights and obligations. What my family taught me to detest is fanaticism. And this because even the noblest idea can be completely destroyed by fanaticism and fanatics. There are plenty examples from the past showing that absolutism can wipe out logic, souls and create prisons without bars among societies.

I have a political word and I also have an opinion as to why we have been led to all this, but this is not the right place to express it. This is a food blog and all I wanted to emphasize is the fact that we all should show zero tolerance to crimes against freedom of speech.

Having my thoughts to all these people whose life was cut so abruptly and those who lost their beloved ones in such a cruel manner, I thought I should make something that would sooth our bodies and souls. Seven years ago my husband and I went to Paris. The city was amazing and I thought that if you could take out of the picture the cars and people with their modern clothes, then you felt like you were back in the 17th century.

One of the things I tried was French Onion Soup and it was love at first site. When I came back, I tried and recreated it and from then on I make it often during winter. I couldn’t find anything more soothing for the body and soul than this soup and wanted to share it with you along with my thoughts. Freedom of Speech is one of the fundamental values of human race and it should remain this way!

French Onion Soup

Ingredients/ Συστατικά
  • 5 onions, sliced
  • 3 tbsp olive oil
  • 3 tbsp butter
  • 2 garlic cloves, minced
  • 1 tbsp sugar
  • 1,5 lt. / 3 pints veal or beef stock
  • 1 cup dry white wine
  • 4 tbsp cognac or brandy
  • Salt and pepper
For the Bread on Top
  • 5 slices of bread
  • Yellow cheese shredded
Instructions/ Εκτέλεση
  1. In a deep pot add the olive oil and butter in medium/high heat.
  2. Add the onions and garlic and sugar.
  3. Sauté for one minute and then reduce the fire to low and let them simmer for an hour to caramelize.
  4. Increase fire to medium/high and pour the wine.
  5. Deglaze and let it evaporate until it remains half.
  6. Pour the beef stock, reduce fire to medium/low and let simmer for 20 to 25 minutes.
  7. Add salt and pepper.
  8. Five minutes before the end pour the cognac or brandy.
For the Bread on Top
  1. Turn on the broiler.
  2. Take a slice of bread and spread some shredded cheese.
  3. Do this for all the slices.
  4. Place them under the broiler and bake them until they get a nice golden color.
  5. BE CAREFUL AND DON’T LEAVE THE BROILER UNATTENDED. IT WILL ONLY TAKE 3 TO 4 MINITUES MAX FOR THEM TO BE READY.
  6. Serve in bowls with a slice of bread floating on top of the soup.

Γαλλική Κρεμμυδόσουπα

Ingredients/ Συστατικά
  • 5 κρεμμύδια, κομμένα σε φέτες
  • 3 κ.σ. ελαιόλαδο
  • 3 κ.σ. βούτυρο
  • 2 σκελίδες σκόρδο, λιωμένες
  • 1 κ.σ. ζάχαρη
  • 1,5 λίτρο μοσχαρίσιο ζωμό
  • 1 φλ. ξηρό άσπρο κρασί
  • 4 κ.σ. κονιάκ ή μπράντυ
  • Αλάτι και πιπέρι
Για το Ψωμί στην Κορυφή
  • 5 φέτες ψωμί
  • Κίτρινο τυρί τριμμένο
Instructions/ Εκτέλεση
  1. Σε μια βαθιά κατσαρόλα προσθέστε το ελαιόλαδο και το βούτυρο σε μέτρια/υψηλή θερμοκρασία.
  2. Προσθέστε τα κρεμμύδια, το σκόρδο και τη ζάχαρη.
  3. Σοτάρετε για ένα λεπτό και στη συνέχεια χαμηλώστε τη φωτιά στο χαμηλό και αφήνετε να σιγοβράσουν για μια ώρα να καραμελώσουν.
  4. Αυξήστε τη φωτιά σε μέτρια/υψηλή και σβήσετε με το κρασί.
  5. Αφήστε το να εξατμιστεί μέχρι να μείνει το μισό.
  6. Ρίξτε το ζωμό, χαμηλώστε τη φωτιά στο χαμηλό και αφήστε να σιγοβράσει για 20 με 25 λεπτά.
  7. Προσθέστε αλάτι και πιπέρι.
  8. Πέντε λεπτά πριν το τέλος ρίξτε το κονιάκ ή το μπράντυ.
Για το Ψωμί στην Κορυφή
  1. Ανάψτε το γκριλ.
  2. Πάρτε μια φέτα ψωμί και απλώστε τυρί τριμμένο.
  3. Κάνετε το ίδιο για όλες τις φέτες.
  4. Τοποθετήστε τα κάτω από το γκριλ και ψήστε μέχρι να πάρουν ένα ωραίο χρυσό χρώμα.
  5. ΝΑ ΕΙΣΤΕ ΠΡΟΣΕΚΤΙΚΟΙ ΚΑΙ ΝΑ ΜΗΝ ΑΦΗΣΕΤΕ ΤΟ ΨΗΣΙΜΟ ΧΩΡΙΣ ΠΑΡΑΚΟΛΟΥΘΗΣΗ. ΘΑ ΠΑΡΕΙ ΜΟΝΟ 3 ΕΩΣ 4 ΛΕΠΤΑ MAX ΓΙΑ ΝΑ ΕΤΟΙΜΑΣΤΟΥΝ.
  6. Σερβίρετε σε μπολ με μια φέτα ψωμί να επιπλέει πάνω από τη σούπα.
