Merry Christmas everybody and I hope New Year will offer us everything last year deprived us. I am sure that you will agree with me that these days kitchen is the place to be in the house. Of course, although cooking is my favorite at the end of these days I feel totally exhausted and at least 2 kilos more fat. Anyway, Christmas is a very important festivity because family comes together and we have the opportunity to play with our children. I prepared a few things so far and I am going to share them with you as the days go by. I will also have guests for New Years’ Eve so I will have to prepare some buffet dishes which I am also going to share with you. I will begin today by giving you the recipe of a salad. I adapted the sauce of this salad from Top Secret Recipes with a small change, the rest of the salad is my own creation and each time I make it I add or subtract something depending on my mood and my fridge’s availability. But enough talking lets move to the recipe part.

Green Salad with Sweet Garlicky Sauce

Ingredients
For the sauce
2/3 cup extra virgin olive oil
less than 1/4 cup granulated sugar
3 tbsp water
2 tbsp white wine vinegar
1 garlic glove minced
1 tbsp Dijon mustard
2 tsp lime juice
2 tsp lemon juice
2 tsp minced fresh parsley
1/2 tsp dried basil
1/4 tsp dried oregano
1/4 tsp salt

For the salad
1 lettuce
1 green pepper
1 red or any other color pepper
1 handful raisins
1 can corn
1 handful croutons plain or any flavor you like
1 handful cashews

Instructions
For the sauce
You whisk everything in your blender. You microwave on high for 1 minute or until the mixture starts to bubble. You remove from microwave and whisk for another minute. You cover and chill for at least an hour.

For the salad
You mix everything in a bowl and you throw the sauce and mix everything together.
You can make the sauce up to three or four days beforehand and store it in the fridge and then half an hour before serving the salad you take it out. Also you can improvise and make the salad according to your liking. It is a great sauce and I always make it when I have guests for dinner.
