Orange Scented Ravanì

At this point of time, I would like to attribute an acknowledgement. As you all know, a month now, I moved to this new site. None of this would be possible, if it wasn’t for my husband. He worked for two months, so as for me to have this new home. He designed and implemented every step necessary to produce this result and had to study and learn many new things. He really enjoyed it, but all this involved many hours of work as well.

So, when he told me the other day that he would gladly eat a sweet with syrup and orange flavor, I couldn’t let it pass. He really asks so very few things for himself and he gives so much that leaves you no other choice than to just make it happen for him.

I took a recipe for Ravanì from Sofia Skoura and by making some alterations; I transformed it into an orange scented sweet.

Ravanì is basically a cake made with a combination of flour and semolina, moisten by syrup poured on top of it. Every nation living in East Mediterranean and Middle East has a sweet like this. It was so moist and fluffy that we ate it within 3 days. Not good for my shape, not good at all, let me tell you!

So, let’s make it!

 

Orange Scented Ravanì

Ingredients

For the cake

2 cups fine semolina

1 ½ cup all-purpose flour

1 cup sugar

1 cup margarine

5 eggs

Juice of one orange (don’t throw the squeezed orange parts, you will need them for the syrup)

1 tsp vanilla extract

2 tsp baking powder

1 tsp baking soda

For the syrup

3 cups sugar

3 cups water

Peels of one orange

Instructions

Shift the flour and mix it with the semolina, the soda and the baking powder. In a mixer put the margarine and mix very well until it becomes pale. Add the sugar and continue to mix.

Divide the egg yolks from the whites.

Throw the egg yolks one by one to the mixer.

Add the juice, the vanilla and the zest of the orange.

In a separate bowl beat the egg whites to make a meringue.

Put the mixer to the lower speed and we throw the flour and the meringue in small portions in turn.

Butter and flour a round medium sized pan and throw the batter. Bake in a preheated oven at 175° C for about ¾ of an hour or until the knife comes clean. Let it cool for 15 minutes.

For the syrup

Put the sugar, the water and the squeezed oranges in a pot in high heat. When it starts to boil lower the heat to medium and boil for 5 minutes.

Remove and with a ladle pour slowly and evenly the hot syrup over the ravanì. Let it stand for 15 minutes and serve. You could add a dollop of vanilla ice cream. De-li-cious!

Ραβανί με Γεύση Πορτοκαλιού

Ingredients/ Συστατικά
Για το κέικ
  • 2 φλ. σιμιγδάλι ψιλό
  • 1 ½ φλ. αλεύρι για όλες τις χρήσεις
  • 1 φλ. ζάχαρη
  • 1 φλ. βούτυρο ή μαργαρίνη
  • 5 αυγά
  • Χυμό από ένα πορτοκάλι (τα στυμμένα πορτοκάλια κρατήστε τα για το σιρόπι)
  • 1 κ.γ. βανίλια
  • 2 κ.γ. μπέικιν πάουντερ
  • 1 κ.γ. μαγειρική σόδα
Για το σιρόπι
  • 3 φλ. ζάχαρη
  • 3 φλ. νερό
  • Φλούδες από ένα πορτοκάλι
Instructions/ Εκτέλεση
  1. Κοσκινίστε το αλεύρι και ανακατέψτε το με το σιμιγδάλι, τη σόδα και το μπέικιν πάουντερ.
  2. Σε ένα μίξερ βάλτε το βούτυρο ή τη μαργαρίνη και ανακατέψτε καλά μέχρι να πάρει ένα υπόλευκο χρώμα.
  3. Προσθέστε τη ζάχαρη και συνεχίστε το χτύπημα.
  4. Χωρίστε τους κρόκους από τα ασπράδια.
  5. Ρίξτε τους κρόκους έναν έναν στο μίξερ.
  6. Προσθέστε το χυμό, τη βανίλια και το ξύσμα του πορτοκαλιού.
  7. Σε ένα ξεχωριστό μπολ χτυπήστε τα ασπράδια να γίνουν μια μαρέγκα.
  8. Έχοντας βάλει το μίξερ στη χαμηλότερη ταχύτητα, ρίξτε το αλεύρι και τη μαρέγκα σε δόσεις εναλλάξ.
  9. Βουτυρώστε και αλευρώστε ένα στρογγυλό μεσαίου μεγέθους ταψί και ρίξτε το μίγμα.
  10. Ψήστε σε προθερμασμένο φούρνο στους 175 ° C για ¾ της ώρας ή μέχρι το μαχαίρι βγαίνει καθαρό.
  11. Αφήστε το να κρυώσει για 15 λεπτά.
Για το σιρόπι
  1. Βάλτε τη ζάχαρη, το νερό και τις φλούδες των πορτοκαλιών σε μια κατσαρόλα σε δυνατή φωτιά.
  2. Όταν αρχίζει να βράζει χαμηλώστε τη θερμοκρασία στο μεσαίο και βράστε για 5 λεπτά.
  3. Αφαιρέστε με μια κουτάλα τις φλούδες και ρίξτε αργά και ομοιόμορφα το καυτό σιρόπι πάνω στο ραβανί.
  4. Αφήστε το να σταθεί για 15 λεπτά και σερβίρετε.
