I am in the middle of changing my blog as I was telling you three months ago. I was supposed to do it earlier but, because of my mom’s surgery, my plans had to be postponed for a while. Now, I and my husband are working very intensely to try and create a new home for my recipes. This is the reason why my posts are so scarce. It is for a good cause, lol.
But the other day, I was having a few friends of my son’s at home and I made this really easy and ‘cool’ sweet for them and everyone really enjoyed it, so I thought I should share it with you and tell you all about it. It is really very easy just like any cheesecake and delicious, a beautiful compliment to a very fulfilling meal. I’ve read many recipes from the net and I ended up with this version.
Oreo Cookies Cheesecake
Ingredients
For the base
200 gr. Digestives
2 tbsp Melted margarine
For the cream
400 gr. Cream cheese
70 gr. Caster sugar
200 gr. Heavy cream (35% fat)
8 oreo cookies, divided
Small oreo cookies for garnishing
Instructions
For the base
In the multi we crumble the digestives. In a bowl we mix them with the melted butter and press them onto a spring form pan with diameter 20 cm. We bake in preheated oven at 175° C for 7 minutes. Take out of the oven and let it cool.
For the cream
In the multi we crumble the 8 oreo cookies. In the mixer we mix the cream cheese with the caster sugar just until they are incorporated. In another bowl we whip the heavy cream and gently we mix it with the cream cheese. We add half of the crumbled oreo cookies and again gently we incorporate them to the cream cheese/whipped cream mixture. We lay this cream over the digestives and put it in the fridge for at least two hours. We take it out scatter the rest of the crumbled oreo cookies on top and garnish with the small ones and serve.

- 200 γρ. μπισκότα digestives
- 2 κ.σ. μαργαρίνη λιωμένη
- 400 γρ. τυρί κρέμα
- 70 γρ. ζάχαρη άχνη
- 200γρ. κρέμα γάλακτος (35% λιπαρά)
- 8 μπισκότα oreo
- Μικρά oreo μπισκότα για το γαρνίρισμα
- Θρυμματίστε τα μπισκότα digestive στο multi.
- Σε ένα μπολ ανακατέψτε τα με το λιωμένο βούτυρο και τοποθετήστε τα σε στρώση σε μια φόρμα με μετακινούμενα πλαινά με διάμετρο 20 cm.
- Ψήστε σε προθερμασμένο φούρνο στους 175 ° C για 7 λεπτά.
- Βγάλτε από το φούρνο και αφήστε το να κρυώσει.
- Στο multi θρυμματίστε τα 8 oreo σε δύο δόσεις των 4 και βάλτε τα στην άκρη.
- Στο μίξερ ανακατέψτε το τυρί κρέμα με την άχνη ζάχαρη μέχρι να ενσωματωθούν.
- Σε ένα άλλο μπολ χτυπήστε την κρέμα γάλακτος μέχρι να γίνει σαντιγύ και απαλά ενσωματώστε το τυρί κρέμα.
- Προσθέστε τα 4 θρυμματισμένα oreo και ανακατέψτε και πάλι απαλά για να τα ενσωματώσετε στο μίγμα τυριού/χτυπημένης κρέμας.
- Ρίξτε την κρέμα πάνω από τη βάση που φτιάξατε, στρώστε τη να είναι ομοιόμορφη και βάλτε τη στο ψυγείο για τουλάχιστον δύο ώρες.
- Λίγο πριν τη σερβίρουμε, προσθέτουμε από πάνω τα υπόλοιπα 4 τριμμένα μπισκότα και γαρνίρουμε με μικρά oreo.
