Orzo Milanese

During cold winter days, I always make something for my son to eat before he drinks his milk and go to bed. He does not want a full meal, but a light dish just before his bedtime. One of these choices I have is orzo Milanese. He likes it very much, is easy to prepare and it’s very nutritious and light. I thought to share it with you just to give you an idea, if you want to make something for your kids, that does not require hours of cooking, is not weird and does not require many ingredients. Even for my fellow bloggers who do not have kids at home, this is a simple and nice idea after a hectic day. All the ingredients can be found in any house and are not fancy or anything. It is a very simple dish, but trust me, if you taste it you will love it. The portions below are for one full dish, you can double and triple, according to your needs.

Orzo Milanese

Ingredients
1/3 cup orzo
1/3 cup tomato juice
1 1/3 cup water
½ tsp salt
1/8 tsp ground nutmeg
1/8 tsp ground cinnamon
1 tsp sugar
2 bay leaves
1 tbsp olive oil

Instructions

In a small saucepan add the tomato juice, water, salt, nutmeg, cinnamon, bay leaves and sugar. Bring to boil. Throw the orzo and lower the heat to medium-low. Let it cook for about 30 minutes or until most of the liquids are absorbed. Couple of minutes before the end, throw the olive oil and mix to incorporate. Remove the bay leaves and serve warm.
