Pork Tenderloin with Apples in Beer and Curry Sauce

Apples have been growing in this corner of the world since ancient years. Greek mythology is full of tales that, at some point, involve an apple somewhere by someone. I have already mentioned the myth of Atalante and Hippomenes and there is also the famous story of Eris who threw an apple saying “To the most beautiful” in the marriage of Pileus and Thetis, because they hadn’t invited her. We all know the sequel of this. The Trojan war between Greeks and people of Troy for the eyes of beautiful Helen of Sparta who eloped with Paris from Troy.

Apple played a major role in courtship between a man and woman during those days also. If a man had feelings for a woman, he threw an apple towards her side. If she lifted the apple, then he knew that he could go on and ask her to marry him. Furthermore, during the wedding ceremony all guests threw apples towards the young couple to symbolize love, affection and admiration. The young couple used to share an apple during their first night as a symbol of fertility and prosperity for the new family that was about to start.

It was only after thousands of years that apple began to have a negative symbolism because of the Old Testament and the story of Adam and Eve who were seduced by the snake and ate the forbidden fruit.

It is apple season in this corner of the world and luckily for me a friend of my father’s brought us about four lugs of apples. As you can understand I have many apples now at home. I hate throwing anything, so I am in a pursuit of using them either raw or cooked and baked. So, in the forthcoming posts you will see scattered here and there recipes with apples either savory or sweet.

For today, I have decided to start with a savory one which was absolutely delicious and appetizing. Pork matches perfectly with apple and adding curry, cardamom and several other spices for India gave this dish a very aromatic and bold flavor. I totally suggest it to you if you are fond of spices of that area of the world and it is a perfect meal for a Fall or Winter day.

Pork Tenderloin with Apples in Beer and Curry Sauce

Ingredients/ Συστατικά
  • Two pork tenderloins cut in slices
  • 1 onion sliced
  • 2 apples cut in cubes
  • 2 tbsp dark brown sugar
  • 1 cup beef stock
  • ¼ cup raisins
  • ¼ tsp turmeric
  • ¼ tsp cardamom
  • ¼ tsp ground coriander
  • ¼ tsp caraway seeds
  • 1 ½ tsp curry powder
  • Pinch of saffron
  • ½ cup beer
  • Salt and pepper
Instructions/ Εκτέλεση
  1. In a deep skillet pour couple of tbsp of olive oil and butter.
  2. Sauté the pork slices until half done.
  3. Remove and set aside.
  4. In the same skillet put the onion and sauté until it starts to soften.
  5. Add the apples and sugar and continue to sauté for about 5 minutes.
  6. Pour the beef stock and all the spices.
  7. Salt and pepper.
  8. Lower heat to medium low and simmer until liquid has lost half its volume.
  9. Turn fire to medium and add the raisins and beer.
  10. Let boil for a few minutes until sauce starts to thicken.
  11. Remove and serve over basmati rice.

Ψαρονέφρι με Μήλα, Κάρυ και Μπύρα

Ingredients/ Συστατικά
  • Δύο Χοιρινά ψαρονέφρια κομμένα σε φέτες
  • 1 κρεμμύδι, σε φέτες
  • 2 μήλα, κομμένα σε κύβους
  • 2 κ.σ. σκούρα καστανή ζάχαρη
  • 1 φλ.ζωμό βοδινού
  • ¼ φλ. σταφίδες
  • ¼ κ.γ. κουρκουμά
  • ¼ κ.γ. κάρδαμο
  • ¼ κ.γ. ξερό κόλιανδρο
  • ¼ κ.γ. κύμινο
  • 1 ½ κ.γ. κάρι σκόνη
  • 1 πρέζα σαφράν
  • ½ κ.γ. μπύρα
  • Αλάτι και πιπέρι
Instructions/ Εκτέλεση
  1. Σε ένα βαθύ τηγάνι ρίξτε δυο τρεις κουταλιές της σούπας ελαιόλαδο και βούτυρο.
  2. Σοτάρετε το χοιρινό μέχρι να μισογίνει.
  3. Αφαιρέστε και αφήστε στην άκρη.
  4. Στο ίδιο τηγάνι βάλτε το κρεμμύδι και σοτάρετε μέχρι να αρχίσει να μαλακώνει.
  5. Προσθέστε τα μήλα και τη ζάχαρη και συνεχίστε να σοτάρετε για περίπου 5 λεπτά.
  6. Ρίξτε το ζωμό βοδινού και όλα τα μπαχαρικά.
  7. Αλατοπιπερώστε.
  8. Χαμηλώστε τη θερμοκρασία σε μέτρια χαμηλή και σιγοβράστε μέχρι το υγρό να χάσει το ήμισυ του όγκου του.
  9. Γυρίστε φωτιά σε μέτρια και προσθέστε τις σταφίδες και τη μπύρα.
  10. Βράστε για μερικά λεπτά μέχρι να δέσει η σάλτσα.
  11. Σερβίρετε με ρύζι μπασμάτι.
