Usually, I do not take recipes from product packages or magazines that have nothing to do with food. This is an exception though. I found this recipe on the package of instant crepe mix. It appealled to me from the very beginning since I like spinach very much, plus it is a rich source of vitamins A, E, C, K, magnesium and antioxidants. So, I thought to give it a try. And what a good idea it was. These crepes are very good and tasty. Of course I added a few things not to the filling but to the topping, nevertheless I do not take credit for this since the basic recipe is somebody else’s. Making crepes of any kind is quite time consuming but what I do is make about 30 or 40 crepes, seperate them in batches of 10 or 12 or 16 and freeze them. When the time comes I unfreeze and use them in any way I like. Let’s do it then.

Spinach Crepes
Ingredients
3-4 scallions
1 tbsp butter
150 gr. mushrooms
600 gr. spinach either fresh or frozen
Salt, Pepper
260 gr. anthotiro(greek cheese with very mild flavor you can substitute with cottage cheese)
1 1/2 cup kefalograviera(salty cheese used to give flavor, you can substitute with parmigiano reggiano)
2 eggs beaten
Dill, parsley
1 cup evaporated milk or low fat cream
1 egg
Parmigiano Reggiano
16 crepes (this time I used a crepe mix but I will post the recipe I use when I usually make them)

Directions
Sautee onion with the butter. Add the mushrooms, the spinach chopped, salt and pepper. A note here, if you use frozen spinach let it thaw, if you use fresh you have to boil it for a couple of minutes and drain it. Let the mix simmer for a few minutes. Take it off the stove and throw the cheese, the eggs, the dill and the parsley. Mix well. Next, you fill the crepes(recipe will follow on my next entry) put them in a buttered glass tray and above them throw a mixture of 1 cup of milk and one egg plus the parmigiano reggiano. You bake in a preheated oven at 200 degrees celcius for approx. 30 minutes or until golden. They are very light and tasty.
