My second degree was in Business Administration and I took it from the American College of Greece. While studying there, I had the chance to meet so many interesting people and I hanged out with a few of them. We were a company of four to five people and we had so much fun. I remember that our meeting point was the library and we were trying to keep quiet while bursting to laughs. I can recall one time that the librarian had to kick us out because we were making so much noise.

I can safely say that these years were the best and most carefree in my life and I always remember them with affection. After we graduated, I worked for a brief period of time and then I left to pursue my MBA in the US. Although I tried to maintain contact with some of them, that was not possible and eventually I lost their traces. Years passed by and from time to time I was asking myself what they were doing, or where they were, what they have done in their lives etc. When I was going out I was always looking around for perhaps a friendly face from the past.

It had been around 25 years since I last saw them and eventually I reconciled with the idea that they were from this type of acquaintances that you meet, spend some time and then they completely disappear from your life. And then the most unexpected thing has happened; they started bumping in my life one after another. One of them married my godchild’s sister, what a coincidence! And then another one found me via LinkedIn.

A few months ago I attended a food exhibition as a genuine foodblogger and I visited a stand of a company that imports Asian products to Greece. To my surprise the person who owns the company is one of the guys of the library company and he has as his employee the other girl we were friends with. During this year I managed to reconnect with four of my college friends. It is amazing how life works everything out sometimes. I visited one of his stores and got acquainted with all the girls working there. They were kind enough to teach me how to make sushi and gave me a whole bunch of products. Although, I had a great teacher in sushi, I do not feel comfortable enough of rolling mine. So I decided to simplify things a bit and make this sushi cake which is equally delicious to sushi but with less fuss and labor. So, if you like Japanese sushi but, like me, you feel reluctant in rolling your own, try this cake and you will not be disappointed.

Ingredients/ Συστατικά
  • 3 nori sheets
  • 2 cups of sushi rice
  • 4 tbsp rice vinegar
  • 1 tsp salt
  • 1 tsp sugar
  • 1 tbsp wasabi sauce
  • 2 tbsp Japanese mayo
  • ½ cucumber, shredded
  • 6 pieces of smoked salmon plus some more for garnishing
  • Cucumber slices for garnishing
  • Dill for garnishing
Instructions/ Εκτέλεση
For the Rice
  1. Wash rice 6 to 7 times until the water comes out somewhat clear.
  2. In a pot we pour 2 cups of water and rice and bring it to boil in high temperature.
  3. When it starts to boil turn off heat.
  4. Transfer the pot to another burner and turn the heat to the lowest.
  5. Leave it there for 12 minutes without lifting the lid.
  6. Turn off the heat.
  7. Transfer to a wooden surface or to the wooden sushi basket.
  8. Mix rice vinegar, salt and sugar and drizzle it over the rice mixing gently with a wooden spatula or ladle.
  9. In another bowl mix the wasabi sauce and the mayo.
  10. Take a nori sheet with the textured side looking at you.
  11. Brush it with some wasabi/mayo batter.
  12. Divide rice in three butches and spread the first one on top making sure it covers the nori completely.
  13. Place another nori sheet on top and brush again with wasabi/nori batter.
  14. Spread the second rice quantity and on top of this spread the grated cucumber making sure it is drained from all its waters.
  15. Place the smoked salmon so as to cover the entire surface.
  16. Place another nori, brush it with the wasabi/mayo and spread the last quantity of rice.
  17. Garnish with cucumber slices, smoked salmon and dill.
  18. Serve and enjoy.

  • 3 φύλλα nori
  • 2 φλυτζάνια ρύζι για σούσι
  • 4 κ.σ. ξύδι ρυζιού
  • 1 κ.γ. αλάτι
  • 1 κ.γ. ζάχαρη
  • 1 κ.σ. wasabi
  • 2 κ.σ. γιαπωνέζικη μαγιονέζα
  • ½ αγγούρι τριμμένο στον χοντρό τρίφτη
  • ½ αγγούρι κομμένο σε λεπτές φέτες
  • 6 κομμάτια σολομό καπνιστό + λίγο ακόμα για το γαρνίρισμα
  • Άνηθο για το γαρνίρισμα
Instructions/ Εκτέλεση
Για το Ρύζι
  1. Ξεπλένουμε το ρύζι 6 με 7 φορές μέχρι το νερό να βγαίνει σχετικά καθαρό.
  2. Σε μία κατσαρόλα βάζουμε 2 φλυτζάνια νερό και το ρύζι μας και το βάζουμε στην ψηλότερη φωτιά.
  3. Μόλις αρχίσει να βράζει σβήνουμε τη φωτιά.
  4. Μεταφέρουμε την κατσαρόλα σε άλλη εστία και ανάβουμε στη χαμηλότερη σκάλα.
  5. Το αφήνουμε σκεπασμένο χωρίς να ανακατέψουμε και να σηκώσουμε το καπάκι για 12 λεπτά.
  6. Κλείνουμε την εστία.
  7. Το αδειάζουμε σε μία ξύλινη επιφάνεια ή στο ειδικό ξύλινο καλαθάκι για σούσι.
  8. Ανακατεύουμε το ξύδι, το αλάτι και τη ζάχαρη και πασπαλίζουμε με αυτό το ρύζι ανακατεύοντας απαλά.
  9. Σε ένα μπολ ανακατεύουμε τη σάλτσα wasabi και τη μαγιονέζα.
  10. Σε ένα πιάτο βάζουμε ένα φύλλο nori.
  11. Αλείφουμε με τη σάλτσα wasabi/μαγιονέζας.
  12. Χωρίζουμε το ρύζι σε τρεις ίσες ποσότητες.
  13. Από πάνω βάζουμε μία ποσότητα ρύζι και το απλώνουμε προσεκτικά να καλύψει όλο το φύκι.
  14. Βάζουμε άλλο ένα φύλλο nori.
  15. Αλείφουμε με τη σάλτσα wasabi/μαγιονέζας.
  16. Από πάνω βάζουμε άλλη μία ποσότητα ρύζι και το απλώνουμε προσεκτικά να καλύψει όλο το φύκι.
  17. Απλώνουμε το τριμμένο αγγούρι αφού πρώτα το έχουμε στίψει για να φύγουν τα νερά του.
  18. Από πάνω βάζουμε το σολομό.
  19. Τοποθετούμε άλλο ένα φύλλο nori.
  20. Από πάνω βάζουμε την τελευταία ποσότητα ρύζι και το απλώνουμε προσεκτικά να καλύψει όλο το φύκι.
  21. Γαρνίρουμε με τις ροδέλες αγγουριού και λίγο σολομό ακόμα.
