When I stumbled upon this dessert, I was intrigued by its name, so I googled it and I learned more about this simple, yet so tasty piece of pastry.

It seems that when Egypt was part of the Ottoman Empire, the mighty Sultan just happened to be on a hunt near an Egyptian village. After hours of hunting, he felt hungry and visited the nearby village to find something to eat.

The villagers asked Umm Ali which means Ali’s mother to make something for the Sultan and so she came up with this pudding.

Of course there are other stories regarding the name, but I prefer this one which is less dramatic and bloody.

Umm Ali is made with puff pastry these days and the addition of heavy cream and milk. I suspect that Ali’s mother didn’t have either back then, so probably she made it with stale bread and milk.

In my effort not to throw anything and since I had some stale Arabic pitas, some leftover nuts and a can of sweetened milk waiting for days to be used, I decided to utilize them by making the pudding. And I did make it and it was so tasty and delightful! Of course I sneaked some chocolate in it, I am sure Ali’s mother wouldn’t mind! You cannot blame a girl for her love for chocolate can you?

In any case, this is a pudding where you can add or replace any ingredient you like or dislike and adapt it to your family’s taste.

It was so delicious, I hardly held my husband from eating the whole bowl, and he is on a diet!

Umm Ali with Chocolate

Ingredients

6 stale Arabic pitas cut in squares

½ cup dried nuts, chopped (I used walnuts, pecans, hazelnuts, almonds)

1 handful raisins

1 handful whole almonds

1 handful pistachios

100 gr./ 3.5 oz. chocolate, chopped

1  can evaporated milk

1 can sweetened milk

½ tsp cinnamon

Instructions

Scald the milks along with the cinnamon so they are hot but not bubbly.

In a rounded soufflé bowl place half of the stale Arabic pita pieces in a layer.

Throw the ½ cup of the chopped nuts, the raisins, the almonds and the chocolate.

On top arrange the rest of the stale Arabic pita pieces.

Pour the scalded milks and sprinkle the pistachios.

Let it stay for 10 to 20 minutes so as for the milk to be absorbed by the pitas.

In the meantime preheat oven to 175°C/350°F.

Place the bowl on the lower level of the oven and bake for about 20 to 30 minutes.

Remove from the oven.

Let it rest for 5 minutes and serve.

Η Μάνα του Αλί με Σοκολάτα
 
Εύκολο, γρήγορο και πολύ νόστιμο γλυκάκι που οι καταβολές του μάλλον προέρχονται από την Αίγυπτο.

Ingredients/ Συστατικά
  • 6 μπαγιάτικες αραβικές πίτες κομμένες σε κομμάτια
  • ½ φλ. φυστίκια (χρησιμοποιήσα καρύδια, πέκανς, φουντούκια και αμύγδαλα)
  • 1 χούφτα σταφίδες
  • 1 χούφτα ολόκληρα αμύγδαλα
  • 1 χούφτα φυστίκια Αιγίνης
  • 100 γρ. σοκολάτα, τριμμένη
  • 1 κουτί γάλα εβαπορέ
  • 1 κουτί γάλα ζαχαρούχο
  • ½ κ.γ. κανέλλα
Instructions/ Εκτέλεση
  1. Ζεστάνετε τα γάλατα μαζί με την κανέλλα έτσι ώστε να είναι καυτά αλλά να μην κοχλάσουν.
  2. Σε ένα στρογγυλό πυρίμαχο σκεύος στρώστε τα μισά κομμάτια από τις αραβικές πίτες σε έαν στρώμα που να καλύπτει τον πάτο.
  3. Ρίξτε το μισό φλ. των κομμένων φυστικιών, τις σταφίδες, τα ολόκληρα αμύγδαλα και τη σοκολάτα.
  4. Από πάνω βάλτε τις υπόλοιπες αραβικές πίτες.
  5. Ρίξτε τα γάλατα και σκορπίστε τα φυστίκια Αιγίνης.
  6. Αφήστε το για 15 με 20 λεπτά να απορροφήσουν οι πίτες τα γάλατα.
  7. Εν τω μεταξύ προθερμάνετε το φούρνο στους 175°C.
  8. Βάλτε το σκεύος στο χαμηλότερο σημείο του φούρνου σας και ψήστε για 20 με 30 λεπτά.
  9. Βγάλτε από το φούρνο, αφήστε το 5 λεπτά να τραβήξει τα υγρά του και σερβίρετε.
