Double Chocolate Tiramisù

- 2 tbsp unsweetened cocoa powder
- 1 ½ cup heavy cream
- 120 gr. /4 oz semisweet chocolate, chopped
- 200 gr. Cream cheese at room temperature
- ¾ cup sugar
- 24 ladyfingers
- In a bowl mix the cocoa powder with 1 cup of very hot water until it is dissolved.
- Put aside.
- In a microwave safe bowl put the chocolate and ¼ cup of the heavy cream.
- Place in the microwave oven for 1 minute or until the chocolate starts to melt.
- Stir until the chocolate is completely melted and incorporated to the heavy cream.
- Set aside to cool at room temperature.
- In the mixer transfer the cooled chocolate and add the cream cheese and the sugar.
- Mix until they are incorporated and after pour the remaining heavy cream.
- Beat for about 2 minutes until the batter becomes fluffy.
- Take a rounded springform pan with diameter about 23 cm, cover its bottom with one layer of ladyfingers.
- With a spoon pour little by little the dissolved cocoa. Don’t pour too much cause they will be soaked in it.
- Then throw half of the chocolate batter. Again cover with another layer of ladyfingers and follow the step mentioned above regarding the cocoa.
- Above them throw the rest of the chocolate batter.
- Cover the tiramisù with a cling film and refrigerate.
- Just before serving dust some unsweetened cocoa on top.
