In a pot put the 3 tbsp of olive oil and place it on medium-high heat.
Add the onion and sauté for couple of minutes.
Add the peas and continue to sauté for another one minute.
Add the water, cinnamon, nutmeg and dill, lower the heat to medium and let it boil for 3 quarters of an hour.
Add the tomato juice and sugar and stir.
Let it cook for another half hour.
Add the ¼ cup of olive oil let it boil for 5 minutes and lastly add the salt.
The reason why we do not add the tomato juice and salt from the beginning of the cooking is because, if we add them, then the peas will become stiff and will never cook to become soft.
Also I prefer to put the olive oil just before the end, because in this way the dish becomes lighter and the aroma of the oil is more vivid in the dish.
