Bougatsinia (Small Greek Sweet Cream Pies)

  • 25 small puff pastry rounded sheets
  • 2 cups of milk
  • ⅔ cup sugar
  • ½ cup + 2 tbsp fine semolina
  • 2 tbsp butter
  • ½ tsp vanilla extract
  • Egg wash to brush the puff pastry for color
  • Caster sugar and ground cinnamon for garnishing
Instructions/ Εκτέλεση
  1. Preheat oven to 180° C / 350°F.
  2. Make the cream first.
  3. In a pot scald the milk and sugar.
  4. When it’s hot and before it starts to bubble throw the semolina and start to stir.
  5. Increase the heat to medium-high and continue to stir constantly.
  6. The cream will soon start to thicken so keep stirring so as not to stick on the bottom of the pot.
  7. Once the cream starts to bubble throw the butter and the vanilla extract and stir to combine.
  8. Set aside and let cool a bit.
  9. In a bowl pour the egg wash.
  10. To assemble take one rounded puff pastry and add about 1 tbsp of the cream.
  11. With water wet the edges of the puff pastry and seal them.
  12. Take a pan and cover it with parchment paper.
  13. Brush the bougatsinia with the egg wash and bake until they are golden brown.
  14. Take them out, let them cool and dust caster sugar and cinnamon.
  15. Absolutely sweethearts.
