Green Salad with Pomegranate Seeds and Vinaigrette

Ingredients/ Συστατικά
For the Salad
  • 4 cremini mushrooms, sliced
  • 4 leaves of salad
  • 2 handfuls of spinach
  • 2 handfuls of rucola
  • ½ cup of pomegranate seeds
  • ½ tsp Herbes de Provence
For the Mushrooms
  • 2 tbsp butter
  • ¼ cup red wine
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • Salt and pepper
For the Pomegranate Vinaigrette
  • 4 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 3 tbsp pomegranate juice
  • 2 tbsp honey

For the Pomegranate Vinaigrette
  1. Place all ingredients in a glass bowl and microwave in high for 30 seconds.
  2. Put aside and let it cool, while preparing the salad.
For the mushrooms
  1. Add the margarine to a skillet in medium heat.
  2. Throw the mushrooms, herbs and spices.
  3. Pour the wine and let them cook until all liquids are absorbed.
  4. Remove from heat and put them aside.
  1. Cut the salad leaves and arrange them along with the rest of the greens in a deep bowl.
  2. Add the pomegranate seeds.
  3. Arrange the mushrooms on top of the seeds and greens.
  4. Pour about four tbsp. of the vinaigrette and mix well.
