Ingredients/ Συστατικά
  • 300 gr./10.5 oz butter
  • 110 gr./4 oz caster sugar
  • 600 gr./21 oz all purpose flour
  • ½ tsp baking powder
  • 1 tsp vanilla extract
  • 25 gr./1 oz cognac or black rum
  • 125 gr./4.5 oz blanched almonds
  • Blossom water for spraying
  • Caster sugar for dusting
Instructions/ Εκτέλεση
  1. Preheat oven to 160 C/320 F.
  2. Put the almonds in a pan and bake them for 5 to 7 minutes until they take a golden color.
  3. Let them cool and put them in between a parchment paper and break them in pieces with the roll pin or any other heavy object.
  4. In the mixer we put the butter and the caster sugar and we mix for 20 minutes. Yes, 20 minutes in high speed. The more we beat the batter the more fluffy they will become.
  5. Turn off the mixer and throw the flour and the baking powder.
  6. Mix until they are incorporated and also pour the cognac or rum.
  7. Finally, throw the almonds and mix for a few seconds until they are incorporated to the dough.
  8. The dough should be a slightly sticky one, but not one that you cannot work with.
  9. We take approximately 35 gr./1 oz of the dough and make rounded balls.
  10. Bake in a preheated oven at 160 C - 170 C / 320 F - 340 F for about 20 to 30 minutes maximum.
  11. The kourabiedes come out of the oven white and without any golden color.
  12. While they are hot spray them with blossom water.
  13. Let them cool completely and dust a lot of caster sugar on top.
