Bouyourdí (Feta Cheese in the Oven with Vegetables)

Ingredients/ Συστατικά
  • 500 gr. / 17 oz. feta cheese
  • ½ cup tomato puree
  • 1 yellow pepper, sliced (you can put any type of pepper and any type of color)
  • 1 tomato, sliced
  • 1 onion, sliced (optional)
  • ¼ cup olive oil
  • 1 tbsp sugar
  • 1 tsp dried oregano
  • ½ tsp dried basil
  • ½ tsp green and red pepper
  • Pinch of salt
Instructions/ Εκτέλεση
  1. Preheat oven to 200°C/ 400°F.
  2. Take a clay pot or a pot with a lid.
  3. Pour the olive oil.
  4. Pour ¼ cup of the tomato puree.
  5. Slice the feta cheese in 3cm/1 in thick slices.
  6. Arrange the feta slices on the pot.
  7. Put the tomato slices on top of the feta.
  8. Add the pepper slices on top of the tomato and if you put onion add it too.
  9. Pour the rest ¼ cup of the tomato puree.
  10. Add all the herbs, sugar and the salt and pepper.
  11. Put the pot in the oven at the lowest level and bake for about 15 minutes with the lid on and another 15 to 20 minutes without it. It is done when the peppers have taken a nice golden color and they are soft.
  12. Serve with warm bread and ouzo!
